- fresh arugula, for garnish
Directions:
- Preheat oven to 450 degrees F (230 degrees C). Prepare a baking sheet by laying a Silpat liner or a sheet of parchment paper on it. Lightly spray the liner or paper with a non-stick cooking spray to prevent sticking.
- In a food processor, add the cauliflower florets. Pulse several times until the cauliflower transforms into a finely grained, rice-like consistency. Transfer the processed cauliflower from the food processor into a microwave-safe bowl. Place the bowl in the microwave and cook the cauliflower for approximately 2 minutes, or until softened. Carefully remove from the microwave and allow the cauliflower to cool completely.
- Once the cauliflower has cooled, place it into a clean dish towel. Firmly wring the dish towel through a couple of times to extract as much excess water as possible.
