  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh lime juice

For the cobbler topping:

  • 1¾ cup all-purpose flour
  • 2 tbsp granulated sugar
  • ¼ tsp kosher salt
  • 1 stick cold butter, cubed
  • ½ cup buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • whipped cream, for garnish

  2. In a large bowl, toss together 2 pounds strawberries, granulated sugar, cornstarch, fresh basil and fresh lime juice until the strawberries are evenly coated. Pour the mixture into the prepared skillet and spread into an even layer.
  3. In a food processor, add the flour, sugar, and salt. Next, add in the cubed cold butter and pulse until pea sized. Add in the buttermilk, egg and vanilla extract. Pulse to combine into a shaggy, slightly wet dough.

  5. Bake in the preheated oven until the topping is golden brown and the strawberry filling is bubbling around the edges.
  6. Let the cobbler cool before serving, so the filling can set slightly. Serve warm, topped with whipped cream, for garnish.
