Squashing the week

Hi friends!

How goes it?

We can’t believe Monday is already here. Where does the time go?

After our weekend of gorgeous, seventy-degree weather, we awoke to cold, drizzly rain this morning. We love when it rains in Denver. Since we see over 300 days of sunshine a year, it’s nice to have a chill day. You would be surprised how quiet things get around the city when it’s dumping rain. That and the smell of bum piss isn’t so overwhelming.

Anyways, this week is going to be busy. Our best friend Allie is visiting this weekend, and we couldn’t be more excited {insert Jersey Shore fist pump}! We haven’t seen Allie since Heather’s wedding. Unfortunately, we didn’t get to spend much time with her at the wedding, but you can bet your sweet tookus we will be catching up this weekend over a lot of red wine.

Work today was pretty typical. People are trying to finish up their year end finances before the holidays hit. These past couple of weeks we have been running around with our head cut off making sure all of their ducks are in a row.

It’s so hard to believe that Thanksgiving is less than a month away. Do you have big plans for Turkey Day? Mr. B and we are planning on heading back to the Ta’ for a Griswold gathering. Hmm…we see men hunting game, while the women shop the Black Friday sales in our near future.

Since the high for the day was only supposed to be fifty, we busted out the warmer clothing. We have been waiting since Labor Day to wear a long black sweater. We're a nerd, what can we say. It’s the little things people!

Even though the weather was cooler, that is no excuse to not run outside. We absolutely refuse (unless it’s -40 degrees outside and blowing wind) to run on the dreadmill. We would rather pound dirt then run inside. Call us crazy, but we have an attention span of a five year old. A minute into a treadmill run, and we're like….”are we there yet?”

Besides the crisp breeze, and a few rain drops, we actually had a good run. We definitely run better when it’s cooler outside. Plus, since it had rained all day the park was quiet, which was HEAVEN!

When we arrived home, we had a couple of things to take care of around the house…like throwing away all of these candles from our wedding.

Simple…we are keeping some of them for sentimental purposes. It’s funny, they still smell nice considering they have been under our bed since 2007. Ooops! Do you keep random stuff under your bed? We only had to time to tackle a small portion yesterday. But we are pretty sure there might be a giant Yeti living under our bed. We thought we saw fur. Hmm…we'll find out more next week.

We were actually excited about cooking dinner tonight. We picked up a pre-cut squash yesterday at Whole Foods because let’s be honest, who likes to cut squash? Anyways, we thought it would pair well with the sauteed pork chops.

The mix inside the squash:
– assorted squashes cubed
– corn
– green bell peppers
– red bell peppers
– onion
– garlic
– cumin
– cilantro
– salt and pepper

We just threw the bad boy on a baking sheet. Slid it into a 400 degree oven for forty minutes, and BAM. Spicy Squash!

We also made some cauliflower to go alongside.

Dinner is served.

And with that, we bid you good night.

P. S. K-State is ranked #11! Booyah!!!!
