Print Recipe

Cauliflower Bacon Soup

Yield: Serves 4

Prep Time: 30 minutes

Cook Time: 1 hour

Ingredients:

5 strips uncooked bacon, diced small
1 1/2 cups chopped yellow onion (approximately 1 large)
3/4 cups chopped celery (approximately 2 ribs)
kosher salt
1/4 cup dry white wine
2 cloves garlic, smashed
1 head cauliflower, chopped
3 cups chicken stock, preferably homemade
1/2 cup whole milk (plus more to thin if desired)
Ground black pepper

Directions:

1. In a large Dutch oven or heavy-bottom saucepan, render some of the fat from the diced bacon over low heat for several minutes. Once a solid layer of fat has accumulated in the pan, increase the heat to medium-low and continue to cook the bacon until it becomes delightfully crisp. Using tongs, carefully remove the crispy bacon and transfer it to a plate lined with paper towels to drain excess fat. Discard all but approximately 3 tablespoons of the rendered bacon fat from the pan. (Don’t worry if there’s slightly less than 3 tablespoons; some bacon brands are leaner than others.)

2. Keep a small cup of water nearby for deglazing. Add the chopped onion and celery to the pan with the reserved bacon fat, along with a pinch of kosher salt. Sweat the vegetables over medium-low heat for several minutes. As they cook, a delicious brown glaze will begin to form on the bottom of the pan. Add 1 tablespoon of the reserved water to deglaze, gently stirring to scrape up the flavorful brown bits and incorporate them back into the vegetables. Repeat this process of sweating and deglazing for about 10 minutes, until the vegetables have caramelized beautifully and are tender. Then, deglaze the pan thoroughly with the dry white wine, scraping any remaining bits from the bottom.

3. Add the smashed garlic and chopped cauliflower to the pan. Increase the heat to medium and cook for approximately 5 minutes, stirring periodically, until the cauliflower begins to soften slightly. Pour in the chicken stock and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pan, and allow the soup to simmer gently for 60 minutes, allowing the flavors to meld and the cauliflower to become very tender.

4. Carefully ladle the cooked soup into a blender (or use an immersion blender directly in the pot). Puree the soup until it is wonderfully silky and smooth. If using a standard blender, work in batches if necessary, being cautious with hot liquids. Return the pureed soup to the pan and stir in the whole milk. Season the soup generously with salt and freshly ground black pepper to taste. Briefly reheat the reserved crispy bacon in a sauté pan if desired, and use it as a delightful garnish for each warm bowl of soup before serving. Enjoy this deeply flavorful and comforting dish!
