Today marks a truly special milestone, one that fills my heart with immense gratitude and a touch of disbelief. Whenever the word “celebrate” comes to mind, my thoughts instantly drift to two iconic comfort foods: cake and pizza. This association undoubtedly stems from cherished childhood memories, particularly my birthday slumber parties. Back then, a gaggle of girlfriends and I would eagerly devour slices of Pizza Hut pizza, followed by my mom’s legendary Chocolate Cake with Marshmallow Frosting. This coming Saturday, August 5th, marks the seventh anniversary of Climbing Grier Mountain! Can you believe it? A significant part of me still finds it incredible that after hitting “publish” for the very first time 2,555 days ago, this blog would eventually evolve into my full-time passion and profession. Slow Cooker Sriracha Beef Short Rib & Kimchi White Pizza

Yield: Serves 4

Prep Time: 30 minutes

Cook Time: 8 hours + 20 minutes

Ingredients:

2 lbs bone-in beef short ribs
2 tbsp light brown sugar
1 tbsp ground cumin
1 tbsp kosher salt
1 tbsp ground pepper
1 large onion, sliced thinly
6 garlic cloves, roughly chopped, divided
1/2 cup rice vinegar
1/2 cup low sodium soy sauce
2 tbsp Worcestershire sauce
2/3 cup Sriracha + plus more for garnish
1 1/4 cups beef stock
1 package store bought pizza dough
2 tbsp unsalted butter
1 shallot, minced
2 tbsp white wine
1/3 cup shredded Parmesan
1/2 cup heavy whipping cream
1/3 cup Kimchi, drained and roughly chopped
1 cup shredded mozzarella
Jalapeno rounds, for garnish
Fresh Thai basil, for garnish

Directions:

1. Prepare the Short Ribs: In a medium bowl, combine the beef short ribs with light brown sugar, ground cumin, kosher salt, and ground pepper. Toss the ribs thoroughly to ensure they are evenly coated with the seasoning mixture. This initial seasoning helps to build a deep flavor profile.
2. Set Up the Slow Cooker: In the bottom of your slow cooker, add the thinly sliced onion, 4 of the roughly chopped garlic cloves, rice vinegar, low sodium soy sauce, Worcestershire sauce, 2/3 cup Sriracha, and beef stock. Stir these ingredients well to create a flavorful braising liquid.
3. Cook the Short Ribs: Carefully place the seasoned short ribs into the slow cooker, nestling them into the liquid. Cover the slow cooker with its lid and cook on either high for 4 hours or on low for 8 hours. The longer, slower cook time will result in incredibly tender, fall-apart beef.
4. Shred the Beef: Once the short ribs are cooked through and fork-tender, carefully remove them from the slow cooker using a pair of tongs and transfer them to a cutting board. Discard the bones, which should separate easily. Using two forks, shred the beef into bite-sized pieces. Set the shredded beef aside until you are ready to assemble the pizza.
5. Prepare the Pizza Dough: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). On a lightly floured surface, take the store-bought pizza dough and roll it out into a 9 x 13-inch rectangle. Carefully transfer the rolled-out dough onto a baking sheet. Partially bake the pizza dough for about seven minutes; this step helps to create a crispier crust and prevents it from becoming soggy under the toppings.
6. Make the White Sauce: While the pizza dough is par-baking, begin preparing your creamy white sauce. In a medium skillet, melt the unsalted butter over medium heat. Add the remaining 2 chopped garlic cloves and the minced shallot. Sauté these aromatics until they are slightly golden brown and fragrant, which should take approximately two to three minutes.
7. Finish the White Sauce: Pour in the white wine and allow it to cook out for about one minute, deglazing the pan and adding depth of flavor. Next, slowly pour in the heavy whipping cream, followed by the shredded Parmesan cheese. Continue to stir the sauce constantly until it has thickened to your desired consistency, usually around four minutes. Remove the skillet from the heat and set the luscious white sauce aside.
8. Assemble the Pizza: Pull the par-baked pizza dough out of the oven. Evenly spread the prepared white sauce over the dough, leaving a 1-inch border all the way around the edges for a crust. Next, generously add the shredded Sriracha beef short ribs on top of the white sauce. Distribute the drained and roughly chopped kimchi over the beef, then sprinkle a full cup of shredded mozzarella cheese evenly over the entire pizza.
9. Bake the Pizza: Carefully place the assembled pizza back into the preheated oven. Bake for approximately 20 minutes, or until the mozzarella cheese has completely melted and is bubbly and golden brown, and the crust is beautifully crisp and golden.
10. Garnish and Serve: Remove the pizza from the oven and let it cool slightly for a few minutes before slicing; this helps the cheese set. Garnish your magnificent pizza with fresh jalapeno rounds, vibrant fresh Thai basil leaves, and if you dare, an extra drizzle of Sriracha for an additional kick.
