Spiced Spring Veggie Danishes with Fresh Chives

Yield: Makes 9 danishes

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients:

1 package frozen puff pastry sheets, thawed
1 egg, whisked for egg wash
6 asparagus stalks, cut into thirds
1 leek, cleaned, thinly sliced
1 cup broccoli florets, small
1 teaspoon red pepper flakes (adjust to taste for desired spice)
1 cup Fontina cheese, freshly shredded
Fresh chives, finely chopped, for garnish

Directions:

1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper or spray it generously with non-stick cooking spray to prevent sticking.

2. Carefully unroll one sheet of thawed puff pastry and place it onto the prepared baking sheet. Evenly distribute the asparagus pieces, sliced leeks, and broccoli florets over the pastry, leaving a small border around the edges. Sprinkle the red pepper flakes over the vegetables, followed by the shredded Fontina cheese.

3. Place the second puff pastry sheet directly on top of the first, covering the filling. Using a fork, gently press down and seal all four edges of the two pastry sheets together. This helps to enclose the filling and creates a beautiful crimped border.

4. In a small bowl, whisk the egg with a tablespoon of water to create an egg wash. Brush this egg wash evenly over the top of the danish. This will give it a beautiful golden-brown color and a lovely sheen. Make three or four small slits on the top pastry layer using a sharp knife; this allows steam to escape during baking, ensuring a crispy crust.

5. Bake for approximately 30 to 40 minutes, or until the danish is puffed, golden brown, and the pastry is cooked through. The exact baking time may vary depending on your oven.

6. Once baked, remove from the oven and let it cool slightly on the baking sheet. Carefully transfer the danish to a cutting board. Cut it into desired squares or rectangles.
