Sausage, Cranberry & Brie Egg Casserole

Sausage, Cranberry and Brie Egg Casserole is a simple, savory meal to make ahead of time! Assemble the night before and bake off in the morning!

Our holiday tour has begun.
Tour stops include: Wichita, Kansas City, and Manhattan (KS).
If you’ve never been to Kansas we are basically making one giant triangle in the middle of the state. Not exactly the elegance of a round the world visit like Santa Claus. BUT! We kind feel like his lighter half because we've got a furry reindeer in the back, presents piled high and Christmas music bumping on the radio.

Even though driving all over Kansas will be a little sporty, we're actually excited about going home for the holidays. We feel like Juniper is a big part of our excitement. She is definitely our fur baby and you can bet your sweet tookus we got her some festive Christmas gear to wear.

Speaking of Christmas, what are your plans? We will be with our folks and we are in charge of making breakfast/brunch. One of our go-to dishes to make is always an egg casserole. It can feed a crowd and all the prep work can be done the night before!

Over the past couple of years we've made some plain Jane versions. Not this year! Hello, Sausage, Cranberry and Brie Egg Casserole. Isn’t she a beaut? There’s something about the cranberry and brie combo that makes anything an 11/10 situation. Plus, with the addition of sausage and cheese, what’s not to love?
Besides a furry bulldog in Christmas striped pjs.
Stay tuned!!

Sausage, Cranberry & Brie Egg Casserole
Yield: Serves 4 to 6Prep Time: 15 minutes
Cook Time: 1 hour
Ingredients:
- 8 large eggs
- 1 1/2 cups whole milk
- 4 to 5 slices sourdough bread
- 1 lb ground sausage, cooked
- 1/2 cup shredded mozzarella
- 1/2 cup fresh cranberries
- 1 7oz round brie cut in half, sliced thinly
- salt and pepper to taste
Directions:
- Preheat your oven to 350 degrees. Spray a 9X13 baking dish with non-stick cooking spray. In a large bowl whisk together the eggs, milk, salt and pepper.
- Take the sourdough slices and arrange them evenly into the bottom of the prepared baking dish. Next, sprinkle the sausage, mozzarella and cranberries over the bread slices. Pour the egg mixture over the sausage. Top the brie slices.
- At this point you can either cover the casserole with foil and place it in the fridge to cook off the following morning. Or cover the casserole with foil and bake for about 40 minutes, remove foil and continue to bake for another 20 minutes (or until the middle of the casserole is set). Serve and enjoy.
