In this recipe, we used Starr Ranch’s Juici Apples, which are our go-to fall-to-winter apple choice! These thin-skinned, dimple-texturing, vibrant red apples are reliable for this hash recipe with their crisp and juicy texture and sweet and tart taste. We have used them before to make our Apple & Poblano Gnocchi Bake and proved that they are also ideal for baking. Truly the apple for everyone, everywhere, for every lifestyle!

Helpful Tips

  • Cut the potatoes into uniform pieces so they bake evenly.
  • Spread the potatoes in a single layer on the pan to ensure that you get golden, crisp surfaces.
  • You might need to add more olive oil to the skillet when cooking the sausage because they tend to soak them up. Do this to ensure they cook well and do not dry up but drain any excess oil before adding the apples and potatoes to keep the hash from being greasy.
  • Give the Sausage and Apple Hash a spicy kick by adding chili powder, cayenne pepper, or chili flakes. You can also use spicy sausage to make it hotter.

Frequently Asked Questions

  • Can we keep the potato peel on? Sure, you can. Just make sure to scrub it thoroughly to remove excess dirt. Then tap them dry before baking.
  • Can we make this vegan? Quite easily! Do this by omitting the sausages or swapping it with vegan meat instead. You can also try using mushrooms to still get that meaty flavor and texture.
  • Is it possible to use regular yellow mustard instead of whole grain? Yes, you can. However, take note that whole grains are thicker and less vinegary, so you will need to adjust the amount based on your liking.
  • Can we use an air-fryer to bake the potatoes? Absolutely! Though the potatoes bake half the time they will when using an oven, you might need to cook them in batches to ensure crisp, golden surfaces.

Storing Notes

It is best to serve Sausage and Apple Hash with Whole Grain Mustard right away to enjoy the memorable textures to the max. If you have leftovers, you can store them in an airtight container once the potatoes and sausages have cooled down. Store in the fridge for three days then reheat them in the oven to give the potatoes a bit of their crispness back. You can also freeze your hash for up to a month.

Ingredients

  • 3 cups Golden potatoes, cut into cubes
  • 2 tbsp Olive oil
  • Kosher salt and pepper to taste
  • 2 medium JUICI apples, cored and cut into wedges
  • 4 links Pork breakfast sausage, cut into rounds
  • 1.5 tbsp Whole grain mustard
  • 1/2 cup Sliced yellow onion
  • Fresh arugula, for garnish

Method

  1. Preheat an oven to 425 degrees. Spray a baking sheet with nonstick cooking spray. Place the potatoes on the baking sheet and spread into an even layer. Next, drizzle the tops of the potatoes with olive oil, salt, and pepper. Cook the potatoes for about 30 minutes, tossing halfway until golden brown.
  2. Next, preheat a large nonstick skillet to medium-high heat. Add the sausage to the skillet and cook until starting to brown, about 3 to 4 minutes. Next, add in the onions and continue to cook. If you need to add some olive oil to the skillet that’s okay. Keep cooking the sausage and onions for another three minutes. Remove from heat and in the Juici apples, potatoes, and mustard. Toss to combine.
  3. Pour the hash into a large serving bowl and garnish with fresh arugula.
