While the allure of starring in a “Got Milk?” billboard might have been a whimsical dream, my appreciation for milk stemmed from its refreshing taste and comforting familiarity. This enduring connection to dairy isn’t just nostalgic; it’s rooted in significant nutritional benefits that often go underestimated.

Did you know that milk and other dairy foods are nutritional powerhouses? They are consistently ranked as top sources for essential nutrients like calcium, vital for strong bones and teeth, and vitamin D, which aids in calcium absorption and supports immune health. Beyond these, dairy also provides potassium, crucial for blood pressure regulation, and a substantial eight grams of high-quality protein per serving, making it an excellent component of a balanced diet. Incorporating dairy into your meals is a simple yet effective way to fuel your body with these critical building blocks, contributing to overall health and wellness.

A Creative Culinary Challenge: Crafting Dairy-Inspired Delights

Recently, I had the incredible opportunity to collaborate with the American Dairy Association Mideast, alongside eleven other talented food bloggers, on an exciting project: to create innovative, dairy-themed recipes that inspire home cooks. This initiative was a natural fit, allowing us to celebrate the versatility and deliciousness of dairy in new and exciting ways. Our collective enthusiasm for the task was palpable, much like pouring milk over a bowl of cereal – a perfect pairing!

The brainstorming process was invigorating. Everyone appreciates a classic mac and cheese, renowned for its creamy texture and rich, gooey cheese. It’s the ultimate comfort food. But how could we elevate it? My goal was to take this beloved staple and transform it into something truly unique and holiday-worthy. The answer? A rustic tart! The Cajun Mac and Cheese Rustic Tart emerged from this creative endeavor, offering a sophisticated presentation without sacrificing the comforting flavors we all adore. This dish is exceptionally versatile, making it an ideal choice for any holiday party, potluck, or recipe exchange. Its bake-and-slice nature simplifies entertaining, while the aromatic spice of Andouille sausage introduces a festive, warming kick that makes this tart undeniably special for the season.

To address this disparity, the American Dairy Association Mideast has launched an incredible initiative: they are donating $1 to Feeding America for every “like,” comment, or share that any of the twelve featured blogger recipes receive on their Facebook page between December 6th and 13th. Imagine the collective impact! Every single interaction from you directly translates into a dollar that helps provide vital sustenance to families in need. Cajun Mac and Cheese Rustic Tart Recipe

Yield: Makes 1 tart (serves 6-8)

Prep Time: 20 minutes

Cook Time: 45 minutes

Ingredients:

  • 1 store-bought pie crust (or homemade for an extra touch!)
  • 1 1/2 cups Andouille sausage, finely diced
  • 1 tablespoon olive oil
  • 1/2 pound elbow macaroni
  • 3 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter
  • 1 cup whole milk
  • 1/2 cup mild cheddar cheese, freshly grated (plus more for garnish)
  • 2 slices bacon, cooked until crispy and chopped, for garnish
  • 1 large egg, cracked and mixed with a splash of water for egg wash
  • Fresh parsley, finely chopped, for garnish
  • Salt and freshly ground black pepper to taste

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. In a medium skillet, preheated over medium heat, add the olive oil. Once shimmering, add the diced Andouille sausage. Sauté for a couple of minutes, stirring occasionally, until the sausage is nicely browned and rendered. Remove the sausage from the skillet and set it aside, leaving any drippings in the pan for extra flavor if desired.
  3. Fill a large saucepan with generously salted water and bring it to a rolling boil. Add the elbow macaroni and cook according to the package directions until al dente. Drain the pasta thoroughly and set aside.
  4. In a small saucepan, melt the unsalted butter over medium-high heat. Once melted, whisk in the all-purpose flour to create a roux. Continue whisking constantly for 1-2 minutes until the mixture is smooth and lightly golden. Gradually whisk in the whole milk, ensuring no lumps form. Bring the mixture to a gentle boil, continuing to whisk until the sauce begins to thicken to your desired consistency. Reduce the heat to medium-low. Stir in the grated cheddar cheese, a dash of salt, and a pinch of black pepper. Continue stirring until the cheese is fully melted and the sauce coats the back of a spoon beautifully.
  5. Pour the prepared cheese sauce over the cooked pasta and the browned Andouille sausage in a large bowl. Stir gently to combine all ingredients, ensuring the pasta and sausage are evenly coated with the creamy sauce.
  6. Carefully roll out the store-bought pie dough onto a baking sheet lined with parchment paper. Spoon approximately 2 cups of the Cajun mac and cheese mixture into the center of the pie crust, leaving a generous border. Carefully fold the edges of the pie dough border over the filling, creating an approximately 9-inch round tart with the mac and cheese exposed in the center.
  7. Brush the folded pie edges with the egg wash to give them a golden, glossy finish. Bake for about 25 to 30 minutes, or until the crust is golden brown and the mac and cheese is bubbly and heated through.
  8. Once out of the oven, immediately sprinkle the tart with the remaining grated cheese, crispy chopped bacon, and fresh parsley for a beautiful and flavorful garnish. Serve warm and enjoy!
