Ingredients:

  • 1 lb boneless skinless chicken thighs, cubed
  • 1 tsp ground cumin
  • 1 tsp ground cardamom
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp ground pepper
  • 2 tbsp olive oil
  • 1/2 cup diced yellow onion
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 1 cup chicken stock
  • 3/4 cup Bob’s Red Mill dry quinoa
  • 1 cup shredded mozzarella
  • Crumbled feta, for garnish
  • Grape tomatoes, for garnish
  • Fresh oregano, for garnish
  • Fresh parsley, for garnish

Directions:

  1. In a medium bowl, combine the cubed chicken thighs with cumin, cardamom, coriander, paprika, garlic powder, salt, and pepper. Toss well to ensure the chicken is evenly coated with the spices.
  2. Preheat a large, oven-safe skillet over medium-high heat. Add the olive oil, then carefully place the seasoned chicken into the hot skillet.
