Mini Hasselback Red Potatoes with Burrata & Bacon
Prep Time: 20 minutes
Cook Time: 1 hour
Ingredients:
8 Black Gold Farm Red Potatoes, medium-sized
2 tablespoons olive oil, extra virgin recommended
salt and freshly ground black pepper to taste
3/4 cup burrata cheese, torn into small pieces
4 pieces thick-cut bacon, cooked until crispy and chopped
4 scallions, thinly sliced, for garnish
Directions:
1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly spray a baking sheet with non-stick cooking spray or line with parchment paper for easier cleanup.
2. Prepare the red potatoes for the hasselback technique: Place each potato on a cutting board. Using two wooden spoons or chopsticks placed parallel on either side of the potato, carefully slice the potato crosswise at approximately 1/8-inch intervals. The wooden spoons will prevent you from cutting all the way through, keeping the potato intact at the bottom. This creates the signature “accordion” effect.
3. Arrange the sliced potatoes on the prepared baking sheet. Drizzle the tops generously with olive oil, ensuring it seeps into the cuts. Season well with salt and freshly ground black pepper.
4. Bake for approximately 45 minutes to 1 hour, or until the potatoes are golden brown, tender when pierced with a fork, and the edges of the slices are crispy. Baking time may vary depending on the size of your potatoes and your oven.
