You can absolutely bet your sweet bottom dollar that I’ll be channeling my inner Indiana Jones, imagining ancient secrets and grand adventures amidst these magnificent ruins. The sheer scale and beauty of Petra are something I’ve dreamed of witnessing for years, and walking through the narrow Siq to emerge into the vast expanse of the city will undoubtedly be a moment I cherish.

Ingredients:

1 lb boneless beef short ribs, trimmed of excess fat

2 cups gochujang (Korean barbecue sauce), preferably a good quality brand

2 tbsp olive oil + additional for frying tortillas

1 cup yellow onion, finely chopped

2 cloves garlic, minced fresh

1 jalapeno, seeded and finely chopped (adjust to your spice preference)

1 tsp ground cumin

2 (15 oz) cans black beans, thoroughly rinsed and drained

1 tbsp fresh cilantro, chopped

1 tbsp hot sauce (such as Sriracha or your favorite brand)

1 tbsp fresh lime juice

8 corn tortillas

Kimchi, for garnish (provides a wonderful tangy crunch)

Pico de gallo, for garnish (freshness and zest)

Salt and freshly ground black pepper, to taste

Optional garnishes: shredded cheese, extra sliced jalapeños, sour cream or crema

Directions:

2. Craft the Flavorful Black Bean Mixture: Meanwhile, as your beef is slow cooking, preheat a large skillet over medium heat. Add 2 tablespoons of olive oil. Once shimmering, add the chopped yellow onion, minced garlic, chopped jalapeño, and ground cumin. Sauté, stirring frequently, until the onions have softened and become translucent, which should take approximately five minutes. Next, pour in about 3/4 cup of water to the skillet. Allow the mixture to simmer gently for about two minutes, giving the liquid a chance to reduce slightly and the flavors to meld. Then, stir in the rinsed black beans, fresh cilantro, and hot sauce. Continue to stir until the bean mixture is heated through, seasoning generously with salt and pepper to taste. Remove the skillet from the heat.
