Ingredients:

1 cup all-purpose flour
3 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
3/4 cup whole milk
1 large egg
2 tablespoons unsalted butter (melted) + 1 tablespoon to melt in pan
3/4 cup regular dark chocolate chips
1/2 cup pumpkin puree
1/2 cup mini dark chocolate chips
Confectioners sugar, garnish
Maple syrup, garnish

Directions:

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). This ensures an even bake for your pancake.
Place a 10-inch cast iron skillet into the preheated oven and let it warm up for about 5 minutes. This step is crucial for achieving a perfectly crispy bottom crust on your pancake. While the skillet heats, prepare your chocolate.
In a microwave-safe bowl, melt 3/4 cup of regular dark chocolate chips. Microwave on high for 30 seconds, then stir thoroughly. Repeat this process, microwaving for 30-second intervals and stirring in between, until the chocolate is completely melted and beautifully shiny. Set the melted chocolate aside to cool slightly.
In a large mixing bowl, combine the dry and wet ingredients for your pancake batter. Whisk together the all-purpose flour, granulated sugar, baking powder, and kosher salt. Then, add the whole milk, large egg, pumpkin puree, the cooled melted dark chocolate, and 2 tablespoons of melted unsalted butter. Whisk until the batter is smooth and well combined, being careful not to overmix. A few small lumps are acceptable.
Carefully remove the hot cast iron skillet from the oven using oven mitts. Add one tablespoon of unsalted butter to the hot skillet, allowing it to melt and coat the bottom evenly. This prevents sticking and adds flavor.
Pour the prepared pancake batter into the buttered skillet, spreading it evenly with a spatula to cover the entire bottom. Generously sprinkle the 1/2 cup of mini dark chocolate chips over the top of the batter.
