Winter Squash Tamale Pie with Harissa

Yield: Serves 4

Prep Time: 20 minutes

Cook Time: 40 minutes

Ingredients:

2 tablespoons olive oil
1 cup butternut squash, cubed
1 yellow onion, diced
1 15oz can black beans, rinsed, drained
1 15oz can corn, drained
1 15oz can Muir Glen fire roasted tomatoes
1/4 cup harissa
1 green pepper, diced
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
1 teaspoon garlic powder
1 cup Monterrey Jack cheese, shredded
1 box cornbread mix prepared (according to package directions)
salt and pepper to taste

Directions:

1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).

2. Lightly spray a 9×13 inch casserole dish with non-stick cooking spray and set aside.

3. Preheat a large, deep skillet over medium-high heat. Add the olive oil, cubed butternut squash, and season with salt and pepper to taste. Sauté the squash for approximately 7 minutes, stirring occasionally, until it begins to soften and take on a slight golden hue.

4. Add the diced yellow onion and green pepper to the skillet with the squash. Continue to cook for another 3-4 minutes until the onions become translucent and the pepper starts to soften.

5. Stir in the rinsed and drained black beans, drained corn, Muir Glen fire-roasted tomatoes (undrained, with their juices), and harissa. Add the chili powder, cumin, coriander, paprika, and garlic powder. Give all ingredients a good stir to combine thoroughly and ensure the spices are evenly distributed.

6. Cook the mixture for another 7 minutes, allowing the flavors to meld and the liquids to slightly reduce. Remove the skillet from the heat.

7. Gently stir in the shredded Monterrey Jack cheese until it is just melted and incorporated into the warm filling.

8. Pour the entire butternut squash mixture evenly into the prepared casserole dish.

9. Carefully spread the prepared cornbread mixture (mixed according to its package directions) over the top of the squash filling, ensuring an even layer that covers the entire casserole.

10. Bake in the preheated oven for about 30 to 40 minutes, or until the cornbread topping is beautifully golden brown and a wooden skewer inserted into the cornbread comes out clean. The filling should be bubbly and hot.
