The Convenience and Comfort of Slow-Cooked Chili

One of the many aspects that make this recipe a true winner is its flexibility and ease of preparation. The Guinness and Black Bean Chili, the heart and soul of this dish, is crafted in the slow cooker. This method is a game-changer, allowing you to achieve incredibly tender steak and a deeply flavorful chili with minimal hands-on effort. Simply brown your steak, toss all the ingredients into the slow cooker, and let it work its magic throughout the day. It’s perfect for busy weeknights, weekend gatherings, or when you simply want to come home to the comforting aroma of a home-cooked meal. The ‘make-ahead’ potential means you can prepare the chili a day or two in advance, freeing up your time when you’re ready to assemble and serve, which is invaluable during busy holiday seasons or game days.

The addition of Guinness beer is not just a nod to St. Patrick’s Day; it’s a secret ingredient that elevates the chili to new heights. Its distinctive roasted malt flavor adds a subtle sweetness and a beautiful complexity, enhancing the savory notes of the steak and spices without overpowering them. Coupled with hearty black beans, aromatic diced onions, crisp green peppers, and a robust blend of chili powder, earthy celery seed, warm cumin, and sweet paprika, this chili is a symphony of flavors that will warm you from the inside out. Don’t worry if you’re not a beer drinker; the alcohol cooks off during the long simmer, leaving behind only its rich essence and a depth of flavor that is truly remarkable. This slow-cooker method ensures that every ingredient has ample time to meld, creating a profoundly satisfying and cohesive taste experience that is greater than the sum of its parts.

Spiralized Fries: A Fun and Flavorful Foundation

While the chili slowly simmers to perfection, the spiralized fries provide the perfect crispy counterpoint. Spiralizing potatoes is not only a fun culinary technique but also offers a lighter, airier texture compared to traditional fries. It’s an excellent way to enjoy potatoes with a bit of a twist, creating long, delicate strands that are ideal for scooping up every bit of that delicious chili. Preparing these fries takes just a “hot second” – a quick spiralize, a soak in cold water to remove excess starch for maximum crispiness, a gentle pat dry to ensure no moisture remains, and then a bake in the oven until golden and perfectly crunchy. This active step can even be a welcome distraction during those intense March Madness games, especially if your team is trailing and you need to channel your energy elsewhere! The unique shape of the spiralized fries also makes them an intriguing visual element, adding to the overall festive appeal of the dish. They’re lighter than chunky wedges but substantial enough to hold up to the hearty chili, providing that satisfying crunch with every bite.

The Art of Assembly: A Mouthwatering Masterpiece

Once your rich Guinness and Black Bean Chili is ready and your spiralized fries are baked to golden perfection, it’s time for the grand finale: assembly! This is where the magic truly happens, transforming individual components into a cohesive, mouthwatering masterpiece. Imagine a generous bed of crispy, seasoned spiralized fries, carefully arranged on a serving tray or individual plates, providing the perfect foundation. Then, spoonfuls of the deeply flavored chili are liberally piled high, ensuring every delicate strand of potato gets enveloped in its savory goodness. Next comes a liberal scattering of shredded mozzarella cheese, ready to transform into a gooey, molten blanket under the broiler. A few minutes under intense heat is all it takes for that cheese to melt into a golden-brown, bubbly layer, perfectly binding all the components together with its creamy texture and sharp flavor. Garnish with fresh, vibrant chives for a pop of color and a hint of oniony freshness, and you have a dish that looks as incredible as it tastes, ready to impress and satisfy.

Is there a better way to kick off March? We certainly think not! This dish is robust enough to tackle the lingering chill of late winter but also vibrant enough to welcome the burgeoning spring. It’s a versatile recipe that fits seamlessly into various March celebrations. Picture these loaded fries as the ultimate game-day snack for March Madness, a festive main course for your St. Patrick’s Day feast, or simply a comforting meal on a cool spring evening. Just try not to ask us this question too early on Sunday morning, especially after the annual struggle with Daylight Savings. Losing an hour of sleep can be tough, but a plate full of these loaded fries is undoubtedly the best remedy, offering warmth, satisfaction, and a moment of pure culinary bliss. Pass the fries, and let the good times roll as you savor every bite of this exceptional creation!

Guinness and Black Bean Chili Loaded Spiralized Fries

Yield: Serves 4 hungry individuals

Prep Time: 25 minutes

Cook Time: 8 hours

Ingredients:

  • For the Rich Guinness and Black Bean Chili:
  • 1 tbsp olive oil
  • 2 lbs 1-inch steak cubes (beef chuck or sirloin work great)
  • 1 yellow onion, finely diced
  • 1 green pepper, finely diced
  • 2 tbsp ground chili powder
  • 1 tbsp celery seed
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 2 15oz cans black beans, thoroughly rinsed and drained
  • 2 10oz cans diced tomatoes with chilies (do not drain, liquid adds flavor)
  • 1 bottle Guinness beer (or a similar dark lager for a robust flavor)
  • 1 cup shredded mozzarella cheese (or a sharp cheddar for extra tang)
  • Fresh chives, finely chopped, for an aromatic garnish
  • Salt and freshly ground black pepper to taste
  • For the Crispy Spiralized Fries:
  • 3 medium russet potatoes, peeled
  • Salt and freshly ground black pepper to taste
  • Non-stick cooking spray or a drizzle of olive oil

Directions:

  1. Preparing the Guinness and Black Bean Chili:
  2. Begin by preheating a large, heavy-bottomed skillet over medium-high heat. Add the olive oil. Once hot, add the steak cubes, seasoning them generously with salt and pepper. Brown the steak cubes for 2-3 minutes on all sides to seal in the juices; work in batches if necessary to avoid overcrowding the pan.
  3. Carefully remove the browned steak cubes from the skillet and transfer them to the bottom of your slow cooker.
  4. To the slow cooker, add the diced yellow onion, green pepper, chili powder, celery seed, cumin, paprika, rinsed black beans, and undrained diced tomatoes with chilies. Season again with a pinch of salt and pepper. Stir all the ingredients gently to combine them thoroughly.
  5. Finally, pour in the entire bottle of Guinness beer. Give it one last stir.
  6. Set your slow cooker to cook on high for 4 hours, or on low for 8 hours. The chili is ready when the steak is fork-tender and the flavors have melded beautifully.
  7. Preparing the Crispy Spiralized Fries:
  8. Preheat your oven to 375 degrees Fahrenheit (190°C). Lightly spray a large baking sheet with non-stick cooking spray or brush with a little olive oil, and set it aside.
  9. Using a spiralizer, transform your peeled russet potatoes into long, delicate strands. Place the spiralized potatoes into a large bowl of cold water for about 10-15 minutes. This crucial step helps remove excess starch, ensuring your fries become wonderfully crispy.
  10. Drain the potatoes thoroughly and then spread them out on a clean wash cloth or paper towels. Gently pat them completely dry. Excess moisture is the enemy of crispiness!
  11. Carefully arrange the spiralized fries in a single layer on your prepared baking sheet. Spray the tops lightly with non-stick cooking spray or drizzle with a tiny bit of olive oil. Season generously with salt and pepper.
  12. Bake in the preheated oven for approximately 15 to 20 minutes, or until the fries are golden brown and delightfully crispy. Cooking time may vary based on your oven and the thickness of the spirals.
  13. To Assemble and Serve Your Loaded Fries:
  14. Once both the chili and fries are ready, arrange the crispy spiralized fries artfully on a large serving tray or individual plates.
  15. Spoon a generous amount of the warm Guinness Black Bean Chili over the top of the fries, ensuring every strand gets some of that rich flavor.
  16. Evenly sprinkle the shredded mozzarella cheese over the chili.
  17. Carefully place the tray or plates under a broiler for a few minutes (keep a close eye on it!) until the cheese is melted, bubbly, and slightly golden brown.
  18. Immediately garnish the tops with fresh, finely chopped chives. Serve your Guinness and Black Bean Chili Loaded Spiralized Fries without delay and enjoy!
