  • 3 medium zucchini, sliced into rounds approximately 1/2-inch thick
  • 2 large red onions, cut into 1-inch thick wedges

Directions:

  1. **Marinate the Chicken:** Begin by placing your diced chicken breast cubes into a large, sturdy Ziploc bag. In a separate small bowl, whisk together the olive oil, fresh lemon juice, red wine vinegar, minced garlic, dried oregano, basil, thyme, ground coriander, and a generous pinch of salt and pepper.
