Celebrating a Remarkable Woman: My Mom’s 60th Birthday
It’s truly hard to believe my mom is turning sixty, because she certainly doesn’t act it! In the most wonderful sense, of course. Her youthful energy, infectious silliness, insatiable curiosity, and boundless creativity are qualities I deeply admire and am proud to say I inherited from her. She has always encouraged me to explore my passions and embrace life with an open heart.
Speaking of creativity, if you find yourself in the Kansas City area, you absolutely must visit her charming store, Top Hat Mercantile, located in the historic West Bottoms. It’s a treasure trove of unique, fun, and vintage finds, perfect for adding character to any home or finding that one-of-a-kind gift. The atmosphere during First Fridays is particularly vibrant and lively, making it an experience not to be missed.
To celebrate this significant milestone, Mr. B and I are heading back to Kansas City to host a spooktacular party on Halloween. The birthday agenda is packed with fun: a delicious chili bar, a thrilling haunted hayrick ride, a lively best costume contest, classic trick-or-treating, and to top it all off, a celebratory cake followed by a scary movie marathon! I have a feeling she’s going to absolutely love every moment of it.
And on a related note, if you have any fantastic ideas for birthday gifts for a 60-year-old mom, I’m all ears! Your suggestions are most welcome, as I’m always looking for that perfect thoughtful present to show her just how much she means to me.

It’s incredibly easy to make, yet it delivers complex flavors that feel wonderfully gourmet. Forget what you thought you knew about traditional sweet bread puddings; this savory rendition is a game-changer.
This Pumpkin, Butternut Squash, and Gorgonzola Bread Pudding is a true standout, earning two enthusiastic thumbs up. It masterfully combines the earthy sweetness of fall vegetables with the sharp, creamy tang of Gorgonzola cheese, all bound together in a luscious egg custard. The result is a dish that’s incredibly comforting, profoundly flavorful, and surprisingly versatile. It’s fantastic for breakfast, especially with a fried egg on top, makes an elegant addition to any brunch spread, or serves as an unforgettable side dish for your Thanksgiving feast or any autumn gathering. Once you try it, you’ll understand why it’s quickly becoming a new favorite.
A Symphony of Fall Flavors: Pumpkin, Butternut Squash, and Gorgonzola
What makes this savory bread pudding so incredibly special? It’s all about the harmonious blend of its star ingredients, each playing a crucial role in creating a rich and satisfying flavor profile that sings of autumn. This dish brings together the best of fall produce with a bold, contrasting cheese to create something truly magical.
- Pumpkin Puree: More than just a fall decoration, pumpkin puree lends a subtle, earthy sweetness and a beautiful, creamy texture to the custard. It infuses the entire dish with that classic autumn essence without overpowering the other flavors. Be sure to use 100% pure pumpkin puree, not pumpkin pie filling, for the best results.
- Butternut Squash: Roasted or sautéed butternut squash cubes add another layer of natural sweetness and a hearty, tender bite. Its slightly nutty and sweet profile complements the pumpkin beautifully, providing depth and substance to the pudding. Pre-cooking the squash ensures it’s perfectly tender when the bread pudding is baked.
- Gorgonzola Cheese: This is where the magic truly happens. The pungent, creamy, and slightly salty notes of Gorgonzola cheese cut through the sweetness of the squash and pumpkin, creating an incredibly balanced and sophisticated flavor. It adds a wonderful savory depth and a delightful tang that elevates the entire dish from a simple side to a gourmet experience. If you’re hesitant about strong cheeses, start with a milder Gorgonzola or a blend with Parmesan for a gentler introduction.
Together, these ingredients create a symphony of flavors and textures—creamy, tender, savory, and subtly sweet—making every mouthful an absolute delight. The inclusion of Parmesan cheese further enhances the savory backbone, while a hint of nutmeg adds warmth and a classic fall spice aroma. This combination transforms simple bread into a sophisticated culinary masterpiece.
Crafting Your Culinary Masterpiece: Tips for Success
Making this Pumpkin, Butternut Squash, and Gorgonzola Bread Pudding is straightforward, but a few key tips will ensure your dish turns out perfectly every time, achieving that irresistible golden-brown crust and moist, flavorful interior.
- The Importance of Day-Old Bread: This is perhaps the most crucial element for any bread pudding. Using slightly stale or day-old bread allows it to absorb the custard mixture much better without becoming soggy. Fresh bread tends to break down too easily. Opt for a sturdy, crusty bread like sourdough, ciabatta, or French bread, cut into one-inch cubes for optimal texture.
- Perfectly Cooked Squash: Ensure your butternut squash cubes are tender before adding them to the mixture. Sautéing them with onion and garlic not only softens them but also infuses them with aromatic flavors that will permeate the entire pudding. Don’t overcook them; they should be fork-tender but still hold their shape.
- Thorough Mixing and Soaking: Take the time to whisk the custard ingredients thoroughly until well combined. Once you add the bread and squash mixture, let it sit for the recommended 10 minutes. This soaking time is essential for the bread to fully absorb the flavorful custard, leading to a moist and evenly textured bread pudding.
- Achieving Golden Perfection: Bake the bread pudding until it’s beautifully golden brown on top and set in the center. A skewer inserted into the center should come out mostly clean. The Parmesan and Gorgonzola sprinkled on top will create a delicious, crispy crust that adds another layer of texture and flavor.
- Seasoning is Key: Don’t forget to season with salt and pepper throughout the process—in the sautéed vegetables and the custard mixture. Proper seasoning enhances all the natural flavors of the ingredients, bringing them to life.
Follow these simple guidelines, and you’ll be rewarded with a bread pudding that’s not only delicious but also impressive. It’s a dish that looks sophisticated but is surprisingly simple to execute.

- Herbal Infusion: Add fresh herbs like chopped sage, thyme, or rosemary to the sautéed vegetables or the custard mixture for an extra layer of aromatic complexity.
- Different Cheeses: If Gorgonzola isn’t your favorite, consider other robust, flavorful cheeses. Fontina offers a nutty, melting quality, Gruyère provides a sweet and salty balance, and sharp white cheddar can add a delightful tang.
- A Hint of Sweetness: For a slightly sweeter, yet still savory, profile, drizzle a touch of maple syrup or honey into the custard mixture, or caramelize the onions for an enhanced natural sweetness.
- Spicy Kick: A pinch of red pepper flakes added with the garlic can introduce a subtle warmth and heat, contrasting beautifully with the creamy elements.
- Additional Vegetables: Feel free to incorporate other fall vegetables. Sautéed mushrooms, caramelized onions, or wilted spinach could be delicious additions.
Storage and Reheating:
Leftovers, if there are any, are just as delicious! Store any remaining bread pudding in an airtight container in the refrigerator for up to 3-4 days. To reheat, simply warm slices in the oven at 300°F (150°C) until heated through, or in a microwave for a quicker option, though the oven will help maintain its crispy top.
