1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/3 cup milk

for the frosting:

4 ounces cream cheese, softened

3 tablespoons unsalted butter, at room temperature

1 cup powdered sugar

1/2 cup frozen raspberries, defrosted with their natural juice

Directions:

for the cake:

Preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius). Prepare an 8-inch square baking pan by lining its bottom with a piece of parchment paper. Lightly spray the exposed sides of the pan with cooking spray to ensure the cake releases easily. In a medium-sized bowl, using an electric mixer on medium speed, beat together the softened butter and granulated sugar for about 1 to 2 minutes, until the mixture becomes wonderfully light and fluffy. Add the large eggs one at a time, followed by the vanilla extract, and continue to beat until just combined, scraping down the sides of the bowl as needed.
