Baked Halibut with Chorizo Butter

Yield: Serves 4

Ingredients:

for the halibut:
4 6oz halibut fillets
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
2 cups polenta, cooked according to package directions
2 cups fresh arugula

for the chorizo butter:
1/2 pound good quality chorizo, casing removed if applicable
1 and 1/2 sticks (12 tablespoons) unsalted butter, cubed

Directions:

For the Halibut:
1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly spray a baking sheet with non-stick cooking spray or line with parchment paper for easy cleanup.
2. Place the halibut fillets onto the prepared baking sheet. Drizzle a small amount of olive oil evenly over the top of each fillet. Season generously with salt and freshly ground black pepper.
3. Bake the halibut for 13 to 15 minutes, or until the fish is opaque throughout and flakes easily with a fork. The exact time will depend on the thickness of your fillets. Avoid overcooking to ensure moist and tender fish.

2. Top the polenta with a generous 1/4 cup of fresh arugula.
3. Carefully place a baked halibut fillet on top of the arugula.
4. Take some of the rich chorizo butter and ladle about 1 to 2 tablespoons (or more, if desired!) evenly over the halibut fillet. Ensure some of the delicious sauce coats the polenta and arugula below.
5. Serve immediately with a crisp glass of white wine for an elevated dining experience.
