There’s nothing quite like immersing yourself in a true St. Paddy’s Day celebration. About five years ago, I had the incredible pleasure of experiencing this firsthand in Chicago. The city takes its St. Patrick’s Day festivities to an unparalleled level, and witnessing the Chicago River transform into a giant, neon green spectacle is an unforgettable sight. Many people wonder how this magical transformation occurs. The secret lies in an eco-friendly, powdered vegetable dye that, when mixed with the river water, creates that iconic, brilliant green. It’s a unique tradition that draws thousands annually, turning the city into a sea of green revelers. Definitely a fun fact to drop at your next cocktail party!

While Chicago certainly throws one heck of a party in honor of St. Patrick, my alma mater’s hometown also knows how to host a giant green bash, filled with youthful exuberance. It’s quite fitting, actually, as I’m heading back there this very weekend to visit family and take care of a few business matters – more on that delightful adventure later. Sweet Potato Corned Beef Hash

Yield: Serves 2 to 3

Prep Time: 20 minutes

Cook Time: 40 minutes

Ingredients:

3 tablespoons olive oil
2 medium sweet potatoes, diced
2 medium green peppers, diced
1 medium onion, diced
1/2 pound corned beef sliced a 3/4 inch thick, diced
3 large eggs
salt and pepper

Directions:

Preheat oven to 375 degrees.

Place sweet potatoes on a baking sheet and bake for 25 minutes. Remove when done and set aside to cool before dicing. In a large cast iron skillet, preheated to medium heat, add olive oil, sweet potatoes and salt/pepper. Sauté the potatoes for about 10 minutes, until they are slightly crispy. Then add peppers, onions, corned beef, and salt/pepper. If you need to add more olive oil to the pan, do it! It’s a feel thing.

Once everything is crispy, turn off heat. In another skillet, preheated to medium heat. Add 1 tablespoon olive oil and crack three eggs into skillet. Cook the eggs until a little opaque.

To serve: place corned beef mixture into a bowl and top with a sunny-side up egg. And of course, serve it with a tall glass of Guinness.
