Mr. B’s Chili Stuffed Jalapeno Cornbread Muffins: A Halloween & Fall Favorite
Prep Time: 30 minutes
Cook Time: 1 hour
Ingredients:
For the Hearty Chili:
4 tablespoons olive oil
2 garlic cloves, minced
1 lb lean ground beef
1 large green bell pepper, finely chopped
1 large red bell pepper, finely chopped
1 medium yellow onion, finely chopped
2 (15oz) cans chili beans, drained (pinto or kidney)
1 (15oz) can fire-roasted diced tomatoes, undrained
2 tablespoons chili powder
1 tablespoon celery seed
1 tablespoon smoked paprika
1 tablespoon ground cumin
Optional Garnishes: sour cream, fresh cilantro (chopped), shredded cheddar cheese
For the Jalapeño Cornbread Muffins:
1 cup yellow cornmeal
1 cup all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 large egg
1/4 cup vegetable oil (or melted butter)
1 fresh jalapeño, seeds and membranes removed, finely diced
1 cup whole milk
Directions:
Preparing the Hearty Chili:
1. Preheat a large, heavy-bottomed pot or Dutch oven over medium heat. Add the olive oil. Once shimmering, add the minced garlic, chopped onions, and both green and red bell peppers. Sauté for 5-7 minutes, stirring occasionally, until the vegetables have softened and become fragrant.

2. In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, granulated sugar, baking powder, and kosher salt. Whisk these dry ingredients together until well combined.
3. In a separate smaller bowl, whisk together the egg, vegetable oil, and whole milk. Add the finely diced jalapeño to the wet ingredients.
