Savoring Southeast Asia: Why These Thai Red Curry Chicken Meatballs Are a Must-Try
Now, let’s talk about the recipe itself! Deciding what to make from this drool-worthy cookbook was a delightful challenge, given the array of tempting options. However, with my recent penchant for all things Thai, the Thai Red Curry Chicken Meatballs practically called out to me. There are two primary reasons why this dish instantly captivated me and will undoubtedly win you over as well:
- **The Magic of One-Skillet Cooking:** Both the succulent chicken meatballs and the rich, aromatic sauce are cooked in the very same skillet! This not only minimizes cleanup but also ensures that every flavor note from the meatballs deeply infuses into the sauce, creating a harmonious and intensely delicious experience. It’s the ultimate convenience for a busy evening.
- **A Symphony of Simple Yet Powerful Flavors:** The brilliance of this dish lies in the simplicity and impact of its core ingredients. Fresh ginger adds a warm, spicy zing, red curry paste delivers an authentic depth of flavor that’s both complex and inviting, and creamy coconut milk provides a luxurious base that perfectly balances the heat. These ingredients, combined with a hint of lime and cilantro, create a vibrant taste profile that transports you straight to the bustling streets of Thailand.

Thai Red Curry Chicken Meatballs
Prep Time: 15 minutes
Cook Time: 25 minutes
Ingredients:
For the Meatballs:
1 lb ground chicken
1/2 cup panko bread crumbs
2 cloves garlic, minced
1 1/2 tsp ginger, minced
1 egg
1/2 tsp salt
1/4 tsp pepper
1/4 tsp crushed red pepper flakes
2 tbsp cilantro, chopped
For the Thai Red Curry Sauce:
1 tbsp olive oil
2 garlic cloves, minced
1 tsp ground ginger, minced
2 tbsp red curry paste
1 cup coconut milk
1 tsp Sriracha
1/4 tsp pepper
1/4 tsp salt
1/4 tsp red pepper flakes
1 tbsp cilantro, chopped
1 tsp lime zest
1 tbsp lime juice
4 small zucchini, spiraled into noodles (optional)
Directions:
For the Meatballs:
Preheat your oven to 400 degrees F (200 degrees C). Lightly spray your cast iron skillet or braiser with non-stick cooking spray, or lightly grease with oil.
In a large bowl, add all of the meatball ingredients (ground chicken, panko, minced garlic, minced ginger, egg, salt, pepper, crushed red pepper flakes, and chopped cilantro). Mix gently just until combined. Be careful not to overmix, as this can lead to tough meatballs. Using a small cookie scoop or your hands, form the mixture into 18 to 24 uniform meatballs. Place the meatballs evenly in your prepared skillet.
Bake the meatballs in the preheated oven for 15 to 20 minutes, or until they are beautifully caramelized and browned on the outside and cooked through. Flip them halfway through the baking time to ensure even browning on all sides. Once cooked, carefully remove the skillet from the oven and transfer the meatballs to a large plate, setting them aside while you prepare the sauce.
For the Thai Red Curry Sauce:
Using the same skillet (no need to clean it – those browned bits add extra flavor!), heat the olive oil over medium heat on your stovetop. Add the minced garlic and ginger, and cook for about 1 minute until the garlic becomes fragrant and lightly golden, being careful not to burn it.
Whisk in the red curry paste and continue to cook for an additional minute, allowing the paste to bloom and release its aromatic oils. Slowly whisk in the coconut milk, ensuring a smooth mixture. Continue whisking gently until the sauce begins to thicken, which should take approximately 4 minutes.
Stir in the Sriracha (adjust to your preferred level of heat), pepper, salt, red pepper flakes, fresh cilantro, lime zest, and lime juice. Taste and adjust seasonings if needed.
If you are adding zucchini noodles, toss them directly into the simmering sauce and cook for about 1 minute, just until they are slightly softened but still retain a slight crunch. Gently add the cooked meatballs back into the skillet with the sauce, tossing them carefully to ensure they are fully coated in the luscious curry.
Garnish with extra fresh cilantro if desired for a burst of color and flavor. Serve immediately with a side of rice, noodles, or additional zucchini noodles for a complete and satisfying meal.
