The Stars of the Show: Burrata and Summer Squash
The Irresistible Allure of Burrata Cheese
Burrata is more than just cheese; it’s an experience. Originating from Puglia, Italy, this fresh Italian cheese is made from mozzarella and cream. Its outer shell is solid mozzarella, while the inside contains a rich, creamy mixture of stracciatella (shreds of mozzarella) and cream. When you cut into it, the luscious, milky interior spills out, creating a truly decadent texture. In this lasagna, burrata transforms from a simple topping to a key player, infusing every layer with its unparalleled creaminess and delicate flavor. It melts beautifully, creating pockets of rich, velvety cheese that complement the fresh vegetables without overwhelming them. This makes it an ideal choice for those looking to elevate a classic comfort food to a gourmet level.
Celebrating the Versatility of Summer Squash
Summer squash, including varieties like zucchini and yellow squash, is a quintessential emblem of the warmer months. Farmers’ markets are currently overflowing with these tender, nutrient-rich vegetables, bursting with mild, earthy flavors and a pleasant bite. For this lasagna, cubing and lightly sautéing the squash, along with sweet corn and diced onion, ensures they soften just enough to integrate seamlessly into the layers while retaining their structural integrity and fresh taste. The squash adds a wonderful lightness to the dish, making it feel less heavy than traditional meat-based lasagnas, and contributes essential vitamins and fiber, turning this indulgent meal into a surprisingly wholesome option. It’s a fantastic way to utilize the abundant produce of the season.
Crafting Your Masterpiece: Elevated Flavors, Simplified Process
The Foundation: A Rich and Flavorful Tomato Sauce
A great lasagna starts with a phenomenal tomato sauce, and this recipe is no exception. We’ve taken a classic component and jazzed it up with the unparalleled quality of Muir Glen’s San Marzano whole roasted tomatoes. These aren’t just any canned tomatoes; they are slow-roasted to bring out their deep, complex flavors, adding an incredible depth, a subtle smokiness, and a touch of sweetness that canned unroasted tomatoes simply can’t match. Once crushed and drained, these tomatoes form a robust and vibrant base for the lasagna, perfectly complementing the creamy burrata and fresh vegetables. Their inherent “sass and spice,” as described by many, truly makes them a game-changer, transforming a simple sauce into something extraordinary.
Light, Healthy, and Guilt-Free Indulgence
Despite its luxurious ingredients, this Easy Burrata and Summer Squash Lasagna is designed to be lighter and healthier than many traditional lasagna recipes. By focusing on fresh vegetables and the rich flavor of burrata, we reduce the need for heavy, meat-based sauces, resulting in a dish that feels utterly satisfying without leaving you feeling weighed down. The use of no-bake lasagna noodles also simplifies the preparation process, cutting down on active cooking time and making this recipe accessible even on busy weeknights. It’s a testament to the idea that you can enjoy hearty, comforting food with fresh, wholesome ingredients, leading to a meal that comes with “zero consequences” – only pure enjoyment.
#winning indeed.

Easy Burrata and Summer Squash Lasagna
Prep Time: 20 minutes
Cook Time: 1 hour
Ingredients:
- 1 cup whole milk ricotta
- 1/2 cup burrata, inside part only (stracciatella and cream)
- 2 tablespoons olive oil
- 3 medium summer squashes (e.g., zucchini, yellow squash), cubed
- 1/2 medium yellow onion, diced finely
- 1/2 cup fresh or frozen corn kernels
- 2 cups Muir Glen whole roasted tomatoes, crushed and liquid drained
- 4 no-bake lasagna noodles
- 2 cups mozzarella cheese, shredded
- Salt and freshly ground black pepper to taste
Directions:
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion, corn kernels, and cubed summer squash. Season with salt and pepper to taste. Sauté for 5 to 7 minutes, or until the vegetables have softened slightly but still retain a bit of their bite. Remove the skillet from the heat.
- Meanwhile, in a medium-sized bowl, gently combine the whole milk ricotta and the creamy, inside part of the burrata. Mix well until smooth.
- Pour about 1/4 cup of the crushed Muir Glen roasted tomatoes into the bottom of a smaller-than-standard baking dish (e.g., an 8×8 inch dish, or a similar size suitable for 2-3 servings). Spread the sauce evenly.
- Place one no-bake lasagna noodle directly over the tomato sauce layer.
- Spread about 1/3 cup of the remaining crushed tomatoes over the noodle. Follow with approximately 1/3 cup of the ricotta-burrata mixture, then sprinkle about 1/4 cup of shredded mozzarella cheese, and finally, spread 1/3 of the sautéed squash mixture evenly over the cheese.
- Repeat step 6 two more times, creating a total of three layered noodle sections.
- Place the last remaining noodle on top of the final vegetable layer. Pour any remaining crushed tomato sauce evenly over the top noodle, ensuring it’s well covered. Sprinkle generously with the remaining shredded mozzarella cheese.
- Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 45 minutes.
- Carefully remove the foil and continue to bake for another 10 to 15 minutes, or until the cheese on top is bubbling, beautifully melted, and golden brown, promising a delicious, comforting bite.
- Let the lasagna rest for 5-10 minutes before serving to allow the layers to set and make for easier slicing.
Tips for a Perfect Lasagna Experience
To ensure your Burrata and Summer Squash Lasagna turns out perfectly every time, consider these helpful tips:
- Don’t Overcook the Squash: Sautéing the squash for just a few minutes keeps it from becoming mushy in the oven. You want it to be tender-crisp.
- Drain Your Tomatoes Well: Excess liquid from the tomatoes can make your lasagna watery. Draining them thoroughly ensures a richer, more concentrated sauce.
- Allow for Resting Time: Letting the lasagna rest for 5-10 minutes after baking is crucial. This allows the cheese and layers to firm up, making it easier to slice and serve without everything falling apart.
- Serving Suggestions: This lasagna pairs wonderfully with a simple green salad dressed with a light vinaigrette to balance the richness. A crusty baguette is also perfect for soaking up any leftover sauce. For wine pairing, a light-bodied white wine like a Pinot Grigio or Sauvignon Blanc would complement the fresh flavors beautifully.
- Customization: Feel free to add fresh herbs like basil or oregano to the ricotta mixture for an extra layer of flavor. A pinch of red pepper flakes can also add a delightful subtle heat.
