We plan to immerse ourselves in the laid-back atmosphere of the Isle of Palms, delve into the rich history and vibrant culinary scene of downtown Charleston, and, of course, spend countless hours basking in the glorious sunshine on the beach. Picture plenty of leisurely “marinating” sessions by the shore, interspersed with even more relaxation.

Having visited Charleston before, we’re somewhat familiar with its hidden gems and popular spots, but we are always eager to discover new favorites. We would absolutely love any recommendations you might have for must-see attractions, unique experiences, or unforgettable dining spots. This trip also holds a special aspiration for Mr. B and me: we’re seriously considering trying surf lessons! It’s a wonderfully wild thought, especially considering that just last year, at this very time, we were navigating the waves on the opposite side of the Atlantic Coast in picturesque Biarritz, France. The idea of catching waves in Charleston brings a thrilling sense of continuity to our travel adventures.

With seventeen of us living under one roof for the entire week, ensuring everyone is well-fed and happy is top priority. Chocolate Cherry Cake with Chocolate Oat Streusel

Ingredients:

for the cake:
2 cups all-purpose flour
2 teaspoons baking powder

1/2 teaspoon ground nutmeg
1/4 teaspoon kosher salt
3/4 cup granulated sugar
1/4 cup unsalted butter, room temperature
1 large egg
1 teaspoon orange zest
1/4 teaspoon vanilla extract
1/2 cup buttermilk
2 cups fresh or frozen (must be thawed) cherries, pitted
1/2 cup mini chocolate chips
confectioners sugar, for garnish

for the oat streusel topping:
1/2 cup granulated sugar
6 tablespoons all-purpose flour
3 tablespoons regular oats
2 tablespoons mini chocolate chips (if desired, adds extra chocolatey goodness)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons olive oil
2 teaspoons buttermilk

Directions:

for the cake:
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Lightly spray a 9-inch round cake pan with non-stick cooking spray, ensuring all surfaces are covered. In a large mixing bowl, combine the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and kosher salt. Whisk these dry ingredients together thoroughly and set aside.

In the bowl of a stand mixer fitted with a paddle attachment (or using a hand mixer), cream together the room temperature unsalted butter and granulated sugar until the mixture is light, fluffy, and pale in color. This usually takes about 2-3 minutes.

Next, add the large egg, orange zest, and vanilla extract to the butter and sugar mixture. Beat until all ingredients are evenly combined and well incorporated, scraping down the sides of the bowl as needed.

Add the olive oil and buttermilk to the dry mixture. Use your fingertips or a fork to work the ingredients together until a crumbly, coarse mixture forms. The streusel should hold together slightly when squeezed. Set aside until ready to use.
