Breakfast time can be tough.

Every member of the family needs to get out the door speedy, fast, and in a hurry, and often there’s not enough time to actually sit and enjoy a meal.

As a mom, we often reach for simple and conventional food items to quickly get breakfast on the table. Yogurt pouch? You got it. Blueberry muffin? Take two. Pop-tart? Just this once.

If you’ve been a long time reader of Fisiz you know that we are on team cake and team waffle. We used to eat waffles every morning as a kid before school. Well, with the recent cottage cheese trend and always looking for ways to add protein in the morning, we thought, why not add cottage cheese to the waffle batter?

We know, sounds a little crazy, but by whipping the cottage cheese it makes for the creamiest, fluffiest waffle batter. Plus, you can make these ahead of time, freeze, and reheat quickly on those busy mornings when you need a meal on the fly.
