Ingredients:

1 lb Copper River Coho Salmon
2 tablespoons olive oil
Salt and pepper to taste
1 1/2 cups red enchilada sauce (*you may have extra leftover)
1 cup canned corn, drained
1 cup black beans, drained, rinsed
2 tablespoons jarred jalapeño juice
1 tablespoon lime juice
1 cup cheddar cheese, shredded
4 oz plain cream cheese, room temperature
12 6-inch flour tortillas
Pico de gallo, for garnish
Sour cream, for garnish
Cilantro, for garnish

Directions:

1. Preheat oven to 400°F (200°C). Place the Coho salmon on a baking sheet. Sprinkle the top with salt, pepper, and drizzle with olive oil. Place the salmon into the preheated oven and bake for approximately 12 to 14 minutes, or until cooked through and easily flaked with a fork. Remove from the oven and allow the Coho to cool slightly.
2. While the salmon cools, spray an 11 x 7-inch baking dish with non-stick cooking spray. Pour 1/4 cup of the red enchilada sauce into the bottom of the prepared baking dish, spreading it evenly.
3. Using a fork, gently shred the cooked salmon and transfer it into a large mixing bowl.
4. To the bowl with the shredded salmon, add 1 cup of the remaining enchilada sauce, the drained corn, rinsed black beans, jalapeño juice, room temperature cream cheese, and lime juice. Mix until all ingredients are well combined and the cream cheese is fully incorporated into the mixture.
5. Begin layering your enchiladas: Arrange three overlapping flour tortillas over the sauce in the baking dish. Spread one-third of the salmon mixture evenly over the tortillas. Sprinkle with 1/4 cup of shredded cheddar cheese.
6. Repeat the layering process two more times: Add three more overlapping flour tortillas, another third of the salmon mixture, and another 1/4 cup of shredded cheese.
