There are days that are simply unforgettable, and yesterday was unequivocally one of them. Mr. B and I found ourselves utterly exhausted after what can only be described as the most exhilarating “beach day” at A-Basin. From soaking up the vibrant Colorado sun, to sporting the most whimsical costumes, and carving through the abundant spring snow, it was a day packed with high-altitude adventure and pure joy. The kind of exhaustion that settles deep into your bones, leaving you with a profound sense of satisfaction and a craving for a long, restorative sleep – which, thankfully, we indulged in last night.
Embracing the Unexpected: Spring Skiing at A-Basin
For those unfamiliar with the magic of Arapahoe Basin, or “A-Basin” as it’s affectionately known, it’s a gem nestled high in the Colorado Rockies. Unlike many resorts that close their lifts by early April, A-Basin famously extends its ski season well into late spring, often past Memorial Day weekend. This remarkable longevity is due to its impressive elevation, with much of the terrain soaring above tree line, ensuring deep snowpacks and incredible spring conditions. But what truly sets A-Basin apart is its unique “beach” culture – a vibrant, sun-drenched spectacle that transforms a traditional ski area into a lively outdoor party.
As we made our way along scenic Highway 6, the sheer volume of snow still clinging to the mountainsides was a testament to A-Basin’s lofty perch. Seeing snowdrifts still towering in late spring can be a bit disorienting, even for seasoned Coloradoans, but it’s precisely what makes the spring skiing here so exceptional. The mountain landscape remains breathtakingly rugged, even as the lower valleys begin to green with the promise of summer.
The GPA Event: A Community Gathering at 13,000 Feet
Our destination for the day was another fantastic event organized by the GPA. While perhaps a more relaxed affair compared to the high-energy Ski Bus adventure or the competitive spirit of the Clay Shoot, it was no less enjoyable. These gatherings are truly at the heart of what makes our community so special – providing opportunities to connect, share experiences, and simply have a great time amidst Colorado’s stunning natural beauty. The camaraderie is palpable, whether we’re hitting the slopes, sharing a meal, or just chatting in the mountain air.
A-Basin offers a truly unique amenity for its spring festivities: rentable parking spots located directly adjacent to the ski lifts. This means you can pull your vehicle right up, set up a mini base camp, and enjoy instant access to the slopes. It’s an unparalleled convenience that fosters the famous “beach” atmosphere, where tailgating blends seamlessly with high-altitude skiing.
The A-Basin Beach: Where Skiing Meets Barbecue
The “beach” at A-Basin is more than just a parking lot; it’s a cultural phenomenon. Imagine the scene: grills sizzling with mouth-watering aromas, vibrant beach chairs scattered across the snow, music drifting through the crisp mountain air, and groups of friends laughing, playing games, and simply soaking up the incredible atmosphere. It’s a place where you can ski a few runs, then effortlessly return to your setup for a barbecue lunch, a refreshing drink, or a quick game of cornhole. This blend of exhilarating downhill action and laid-back social gathering is truly one of my absolute favorite things to do in Colorado. It perfectly encapsulates the state’s adventurous yet relaxed spirit.
Given the incredible amount of snow still covering the slopes, we were able to enjoy a substantial amount of skiing throughout the day. Spring skiing often means softer snow, warmer temperatures, and bluebird skies, making for incredibly forgiving and enjoyable conditions. But no “beach day” at A-Basin would be complete without embracing the spirit of fun and dressing up! We decided to pay homage to classic video game heroes, and our attire for the day was a huge hit:
Meeting Mario and Luigi on the Slopes!
Yes, that’s right – we were Mario and Luigi! Sporting bright red and green overalls, caps, and mustaches, we brought a dash of Nintendo magic to the ski slopes. The reactions were priceless. We were a massive hit, particularly with the younger crowd. Little kids, wide-eyed with excitement, would approach us, exclaiming their love for Super Mario and asking for high-fives. It was incredibly cute and added an extra layer of joy to an already fantastic day, reminding us how simple pleasures and a bit of playful spirit can truly elevate an experience.
After an epic day of skiing, barbecue, and character impersonations, we headed home, completely spent. We crashed almost immediately, the fatigue of altitude and activity catching up to us. Waking up this morning, my first thought was of food – a deep, undeniable hunger that only a truly satisfying meal could quell. I had a brilliant idea for a quick, hearty brunch that perfectly combines savory flavors with ease of preparation, which I’m excited to share with you.
Fueling Your Adventures: The Ultimate Breakfast Quesadilla
This Breakfast Quesadilla is the ideal post-adventure meal: quick to assemble, incredibly satisfying, and packed with flavor. It’s also highly customizable, so feel free to adjust to your personal preferences or what you have on hand.
Serves 6
Ingredients:
- 1 small red bell pepper, finely diced
- 1 small green bell pepper, finely diced
- 1/2 red onion, finely diced
- 1 can (4 oz) Hatch green chilies, diced (adds a fantastic mild heat and authentic flavor)
- 6 large eggs (farm-fresh, if possible, for best flavor)
- 12 large flour tortillas (two per serving for a substantial quesadilla)
- 2 cups shredded cheese (a good melting blend like Monterey Jack, cheddar, or a Mexican blend works perfectly)
- Salt and freshly ground black pepper to taste
- A touch of olive oil or butter for sautéing
Directions:
- Prepare the Veggies: Heat a skillet over medium-high heat with a tablespoon of olive oil or butter. Add the finely diced red pepper, green pepper, and red onion. Sauté until the vegetables are tender-crisp and slightly caramelized, about 5-7 minutes.
- Add Chilies: Stir in the canned Hatch green chilies and cook for another 2-3 minutes, allowing them to heat through and meld with the other vegetables.
- Scramble the Eggs: In a separate bowl, whisk the 6 eggs with a pinch of salt and pepper until well combined. Pour the egg mixture into the skillet with the sautéed vegetables. Gently scramble the eggs, stirring frequently, until they are cooked through but still moist. Remove from heat and set aside.
- Prepare the Tortillas: Preheat your broiler. On a large baking sheet, arrange two tortillas per serving (so, for 6 servings, you’ll be doing this in batches or using multiple sheets). Evenly sprinkle a generous layer of shredded cheese over one side of each tortilla.
- Broil to Perfection: Place the baking sheet under the broiler. Watch carefully, as tortillas can brown quickly! Broil until the cheese is bubbly and melted, and the tortillas are lightly golden and slightly crisp, about 1-2 minutes.
- Assemble the Quesadillas: Once the tortillas are ready, carefully remove them from the broiler. Place one cheesy tortilla on a plate. Spoon a portion of the scrambled egg and veggie mixture evenly over the cheese. Then, top with a second cheesy tortilla, cheese-side down, creating a delicious sandwich.
- Serve and Enjoy: Cut each quesadilla into wedges, similar to how you’d cut a pizza. Serve immediately with your favorite toppings.
Topping Suggestions: A dollop of sour cream or Greek yogurt, fresh salsa, sliced avocado or guacamole, hot sauce for an extra kick, or a sprinkle of fresh cilantro all make fantastic additions!
