Pumpkin Apple Cake with Caramel Sauce

Yield: Makes 1 9-inch cake

Ingredients:

For the Topping:
3 tablespoons all-purpose flour
3 tablespoons brown sugar
1 1/2 tablespoons chilled butter, cubed

For the Cake:
3/4 cup granulated sugar
1/2 cup pumpkin puree
3 tablespoons unsalted butter, room temperature
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 large egg
1 large egg white
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup buttermilk
2 large apples, sliced thinly
Caramel sauce, for garnish

Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

For the Topping:
2. In a food processor, combine the flour, brown sugar, and chilled butter. Pulse until the mixture resembles coarse, pea-sized crumbs. Set aside.

For the Cake:
3. In a stand mixer fitted with a paddle attachment, combine the granulated sugar, pumpkin puree, room temperature unsalted butter, ground cinnamon, ground nutmeg, ground cloves, large egg, and large egg white. Beat on medium speed until all ingredients are slowly and thoroughly incorporated and smooth.

4. In a separate large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

5. With the mixer on low speed, gradually add the dry flour mixture to the wet ingredients, adding about a third at a time. Alternate adding the flour mixture with small portions of buttermilk, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.

6. Lightly spray a nine-inch round cake pan with non-stick cooking spray. Pour the cake batter into the prepared pan and spread it evenly.

7. Arrange the thinly sliced apples decoratively over the batter in a spoke-like pattern, or in concentric circles, ensuring an even layer.

8. Sprinkle the reserved crumb topping generously over the apples.

9. Bake for approximately 45-50 minutes, or until the cake is golden brown and a wooden skewer inserted into the center comes out clean. The timing may vary slightly depending on your oven.

10. Remove the cake from the oven and allow it to cool in the pan on a wire rack for about 10-15 minutes before carefully inverting it onto the rack to cool completely.

11. Once cooled, transfer the cake to a serving dish. Before serving, drizzle generously with your favorite caramel sauce. Enjoy!
