Recipe: Neapolitan Baked Doughnuts with Fresh Strawberry Frosting
These Neapolitan Baked Doughnuts offer a delightful trio of flavors – rich chocolate, sweet strawberry, and subtle coconut – perfect for any celebration, especially a baby shower! Baking them makes them lighter and easier to prepare than traditional fried doughnuts, allowing the vibrant flavors to truly shine. The homemade strawberry frosting adds a burst of fresh fruitiness that perfectly complements the cocoa notes.

Neapolitan Baked Doughnuts

Ingredients:
for the doughnuts:
2 cups cake flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/4 cup unsweetened cocoa powder
1/2 teaspoon nutmeg
1 teaspoon kosher salt
3/4 cup buttermilk
2 eggs, large
2 tablespoons unsalted butter, melted and cooled
1/2 cup coconut flakes (for topping)
for the strawberry frosting:
1 cup fresh strawberries, halved with tops removed
1 cup unsalted butter, softened
2 cups confectioners sugar (powdered sugar)
1 teaspoon vanilla extract
Directions:
for the doughnuts:
1. Preheat your oven to a precise 425 degrees Fahrenheit (220 degrees Celsius). This high initial heat helps the doughnuts rise beautifully and achieve a light, airy texture. Lightly spray your doughnut pan with a nonstick cooking spray, ensuring every crevice is coated to prevent sticking. A good nonstick spray will make removal much easier.
2. In a large mixing bowl, meticulously sift together the cake flour, granulated sugar, baking powder, rich unsweetened cocoa powder, fragrant nutmeg, and kosher salt. Sifting is a crucial step that helps aerate the dry ingredients, preventing lumps and ensuring a tender crumb in your finished doughnuts. Make sure all ingredients are well combined.
3. Create a well in the center of your dry ingredients. Add the buttermilk, large eggs, and the melted, cooled unsalted butter. Begin to beat the mixture gently, just until all the ingredients are combined. Be careful not to overmix, as this can lead to tough doughnuts. A few small lumps are perfectly fine; the goal is just to hydrate the flour.
4. Carefully spoon or pipe the batter into each doughnut cup of your prepared pan, filling them approximately two-thirds full. This allows room for the doughnuts to rise without overflowing. If using a piping bag (with or without a tip), it can make this step much neater and more efficient.
5. Bake for 10 to 12 minutes. You’ll know they are perfectly done when the tops of the doughnuts spring back gently when lightly touched. Overbaking can dry them out, so keep a close eye on them. Once baked, remove the pan from the oven and let the doughnuts cool in the pan for about 4 to 5 minutes. This cooling period helps them firm up, making them easier to remove without breaking. After this initial cooling, transfer them to a wire rack to cool completely before frosting.
for the strawberry frosting:
1. Prepare your fresh strawberries by placing them in a food processor. Pulse until you achieve a smooth puree. This ensures a consistent, vibrant strawberry flavor throughout the frosting.
2. Pour the strawberry puree into a small saucepan. Place the saucepan over medium heat and simmer the puree, stirring occasionally, until it has reduced by half. This reduction process intensifies the strawberry flavor and removes excess moisture, preventing your frosting from becoming too runny. Once reduced, remove it from the heat and allow it to cool completely before proceeding. It’s essential that the puree is cool to prevent melting the butter in the frosting.
3. In a stand mixer fitted with a paddle attachment, cream the softened unsalted butter until it is light and fluffy. Gradually add 1 cup of confectioners sugar, beating until well combined and smooth. The butter should be at room temperature for the best results.
4. Add the vanilla extract and 2 tablespoons of the cooled, reduced strawberry puree to the butter mixture. Continue to beat until fully incorporated. The puree will start to give the frosting its beautiful pink hue and natural fruity taste.
5. Gradually add the remaining 1 cup of confectioners sugar and another two tablespoons of strawberry puree. Mix until the frosting is smooth and creamy. You may have some strawberry puree leftover, which can be used for other purposes or simply discarded. If the frosting appears too runny, add more confectioners sugar, one tablespoon at a time, until you reach your desired thick, spreadable consistency. If it’s too thick, a tiny splash of milk or extra puree can thin it out.
6. Once the doughnuts are completely cool and the frosting is ready, generously spread the strawberry frosting on top of each doughnut. For a perfect Neapolitan finish, sprinkle the frosted tops with the reserved coconut flakes. Serve immediately and enjoy the delightful combination of chocolate, strawberry, and coconut!
