Open-Faced Artichoke & Arugula Sandwiches with Sunny-Side Up Egg

Ingredients:
for the sandwiches:
4 thick slices brioche
4 eggs
2 tablespoons olive oil
1 cup baby artichokes in oil, drained
1 cup fontina, shredded
2 shallots, sliced thinly
1 1/2 cups fresh arugula
salt and pepper to taste
for the lemon aioli:
1 cup mayonnaise
1 garlic clove, minced
zest of 1 lemon
squeeze of 1 lemon juice
salt and pepper to taste
Directions:
for the sandwiches:
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Arrange the four thick slices of brioche bread evenly on a baking sheet. Spread a generous layer of the freshly prepared lemon aioli onto each brioche slice, ensuring full coverage for maximum flavor. Evenly distribute 1/4 cup of the drained baby artichokes, the thinly sliced shallots, and 1/4 cup of shredded fontina cheese over each aioli-coated slice. Bake for approximately 5 minutes, or until the cheese is beautifully golden brown and delightfully bubbly, and the brioche is lightly toasted.
Meanwhile, heat the olive oil in a skillet over medium heat.
