Kale Chips

Lately, we have been into creating speedy and lighter side dishes. It could be the fact that this time of year we always over indulge in our food consumption and rarely feel like cooking. Or, that we are still wearing sweat pants every night when we come home from work due to Thanksgiving.
We were recently catching up on some of our go-to food blogs, when we stumbled upon this recipe. Kale Chips. Apparently, they are all the rage right now in the foodie world.
How did we miss this memo?
On Sunday, when we were drooling over the produce section at Whole Foods, we decided we should give the recipe a try. We have always just sauteed Kale so when we found out you could bake these suckers, we were ecstatic! The recipe is beyond simple, and a favorite part is, you can dip the chips into anything your hearts desire. Our favorite, a mixture of mayo and Dijon mustard. Love it!
