Fresh Air Retreat Atlanta
I just returned from my ninth Fresh Air Retreat in Atlanta, co-hosted with Liz from The Lemon Bowl. This season was especially rewarding — we connected with brands I genuinely enjoy and trust, and I came home eager to cook.
With Amylu Italian Style Chicken Crumbles, Butterball Hardwood Smoked Turkey Sausage, and a container of SUNSET® Flavor Bomb® tomatoes in hand, the Loaded Italian Chip Tray came together in about twenty minutes. It’s become a go-to for quick entertaining and easy dinners.

What Is a Chip Platter, Exactly?
Think of this as an Italian take on loaded nachos. Wavy potato chips form a sturdy base that holds warm, savory toppings: seasoned chicken crumbles, smoky seared turkey sausage, juicy tomatoes, shredded mozzarella, tangy banana peppers, crisp lettuce, and a finish of oregano and fresh basil.
It’s crunchy, bold, and has that Italian deli energy that feels special without complicated prep. Serve it as an appetizer, game-day snack, or a relaxed weeknight dinner.

Ingredients
- Wavy potato chips — the ridged cut is key because it holds toppings and stays sturdier than flat chips.
- Amylu Italian Style Chicken Crumbles — fully cooked and seasoned, they form the flavorful backbone of the tray.
- Butterball Hardwood Smoked Turkey Sausage — sliced and seared until golden for smoky depth.
- SUNSET® Flavor Bomb® Cherry Tomatoes — halved or quartered; juicy tomatoes brighten every bite.
- Shredded mozzarella — mild and melty, it ties all the ingredients together.
- Sliced banana peppers — add tang and a mild heat.
- Shredded lettuce — added at the end for freshness and crunch.
- Dried oregano — a finishing pinch to enhance the Italian profile.
- Fresh basil — torn or chopped just before serving to elevate the platter.
How to Make the Loaded Italian Chip Tray
Step 1. Slice the Butterball smoked turkey sausage into half moons. Use about half the sausage. Heat a drizzle of olive oil in a skillet over medium-high and sear the slices in a single layer for 2–3 minutes per side until nicely browned. Remove and set aside — the crust adds key flavor.
Step 2. In the same pan, warm the Amylu Italian Style Chicken Crumbles for 3–4 minutes over medium heat, stirring occasionally, until fragrant and heated through. Set aside.
Step 3. Spread wavy potato chips in a single, generous layer on a large platter or sheet pan, overlapping slightly so each scoop has a solid chip underneath.
Step 4. Scatter the warm chicken crumbles and seared sausage evenly over the chips.
Step 5. Add the quartered Flavor Bomb tomatoes and sliced banana peppers across the top.
Step 6. Immediately sprinkle the shredded mozzarella over everything. If you want the cheese melted and bubbly, place the sheet pan under the broiler for about 5 minutes until golden, watching closely.
Step 7. Finish with shredded lettuce, a generous pinch of dried oregano, and fresh basil. Serve right away.

Tips for the Best Results
- Layer wisely. Start with chips, add warm proteins, then cheese, and finish with fresh cold toppings to avoid soggy chips.
- Serve immediately. The platter is best eaten the moment it’s assembled — chips hold up for only a short time.
- Sear the sausage well. A golden crust adds big flavor, so let the pan get hot and don’t overcrowd it.
- Use a large platter or sheet pan. Spreading everything thinly gives more people a good chip-to-topping ratio.
- Add basil last. Fresh basil should go on right before serving to preserve its aroma and color.
Ways to Serve It
This tray adapts easily to many occasions:
- Game day appetizer — place it in the center of the table and watch it disappear
- Easy weeknight dinner — serve with a simple green salad for a complete meal
- Summer cookout — pairs well with grilled mains and other casual sides
- Party food — make multiple platters so guests can graze

Frequently Asked Questions
Can I prep any of this ahead? Yes. You can sear the sausage and heat the chicken crumbles up to a day ahead and refrigerate them. Reheat in a skillet before assembling.
Can I swap the sausage? Absolutely. Any fully cooked smoked sausage works; just aim for a good sear to develop flavor.
What if I can’t find Flavor Bomb tomatoes? Use the ripest cherry or grape tomatoes you can find. They’ll still give bright, juicy pops of flavor.
How many does this serve? As an appetizer it serves about 6–8 people; as a main, plan for roughly 4 servings. It’s easy to scale by using an additional platter.
