Mini Cardamom and Dried Plum Ricotta Cakes

Cook Time: 30 minutes
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp cardamom
- 3/4 tsp kosher salt
- 3 large eggs
- 1 1/2 cups whole milk ricotta
- 1/2 tsp vanilla extract
- 1 stick unsalted butter, melted and cooled
- 1/2 cup California prunes, roughly chopped
- Confectioners sugar, garnish
Directions:
- Preheat an oven to 350 degrees Fahrenheit (175°C). Prepare your baking pans: spray two mini 4-inch cake rounds, two mini 5-inch cake rounds, and one 4×6 mini loaf pan with non-stick cooking spray. Alternatively, if you prefer a single larger cake, you can use one 9-inch cake round instead of the mini pans.
- In a large mixing bowl, combine the dry ingredients: all-purpose flour, granulated sugar, baking powder, cardamom, and kosher salt. In a separate large bowl, whisk together the wet ingredients: eggs, whole milk ricotta, vanilla extract, and melted and cooled unsalted butter until well combined. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix. Finally, gently fold in the roughly chopped California prunes.
- Divide the batter evenly among your prepared mini cake pans. If you opted for a single 9-inch cake round, pour all the batter into that pan. Bake the mini cakes for approximately 30 minutes, or the whole 9-inch cake for about 55 minutes. The cakes are done when a toothpick inserted into the center comes out clean.
