Prepare to savor every exquisite bite of this ultimate seafood sensation.

Our inspiration for such an opulent dish often stems from truly memorable experiences, and for me, that was a recent babymoon adventure in the breathtaking state of Maine. Before this trip, I had never ventured to the Pine Tree State, and frankly, I wasn’t sure what to expect. What I discovered, however, was a landscape of unparalleled majesty and charm that immediately captured my heart. Maine seamlessly blends dramatic coastlines with rolling mountains, offering a unique duality that caters to every nature lover. The crisp, salty air, the picturesque sailing boats dotting the harbors, and the sheer abundance of fresh, incredible seafood available at every turn created an atmosphere of pure bliss. It was a destination that truly ignited a passion for exploring coastal wonders and savoring the freshest catches from the sea.

The ease of travel was an unexpected bonus, making our babymoon even more relaxing. With a convenient direct flight from Denver to Portland, Maine felt surprisingly accessible. The local traffic was a breath of fresh air compared to the usual I-70 shuffle to the mountains back home, allowing us to truly unwind and soak in the scenery. I was so enchanted by the state’s beauty and welcoming vibe that I’ve already declared it a place I want to return to, perhaps making it a cherished tradition for our family, even if not every single year. The thought of future visits fills me with excitement, particularly imagining winter sports at places like Sugarloaf next year—an idea that now sounds incredibly appealing!
Moreover, Maine proved to be incredibly family and pet-friendly, especially charming towns like Bar Harbor. The community spirit was palpable, with delightful movie nights in the park, lively ice cream socials, opportunities for blueberry picking, and serene sailing cruises that offered stunning views of the coast. I can already envision bringing Baby G along to experience these joys, creating new memories together. There’s also a quaint spot in South Brooksville that holds a special place in my heart, and I’m eagerly hoping to see the iconic Condon’s Garage sign proudly displayed again on our next visit. These vivid memories of Maine’s hospitality and its unparalleled access to fresh, high-quality ingredients, particularly its world-renowned lobster, laid the perfect groundwork for what was to become my latest culinary endeavor.

Upon returning home, still basking in the glow of our Maine adventures, it took me no more than two days to realize that my next recipe had to showcase lobster. For years, the idea of preparing lobster at home felt incredibly daunting. It’s an expensive ingredient, and the thought of overcooking it, turning that tender, sweet meat into rubber, filled me with anxiety. But the sheer deliciousness of the lobster we enjoyed in Maine, coupled with my newfound culinary confidence, inspired me to tackle this challenge head-on. It was time to put on my “big girl panties” and create something truly special, something that would honor the exquisite flavor of fresh lobster while making it accessible and enjoyable for home cooks. Thus, the idea for this opulent **Lobster Croque Madame** was born—a dish designed to transform intimidation into culinary triumph.

Mastering the Art of Lobster Croque Madame: A Culinary Breakdown
The traditional Croque Monsieur, a classic French bistro staple, is a grilled ham and cheese sandwich often made with Gruyère or Emmental cheese and slathered with béchamel sauce. The Croque Madame elevates this by adding a fried or poached egg on top, its runny yolk creating a “hat” for the sandwich. Our version takes this beloved concept and infuses it with coastal luxury, replacing the ham with succulent, sweet lobster meat and enhancing the béchamel with a hint of Dijon for a delightful tang.
Preparing the lobster for this decadent dish is surprisingly straightforward, and mastering it will dispel any intimidation you might have. Begin with thawed lobster tails. A simple cut down the back of the shell makes for easy meat removal after cooking. Boil the tails for just one to two minutes in generously salted water—this brief cooking time is key to ensuring the lobster remains tender and juicy, never tough. Once cooked, cool them quickly and then roughly chop the sweet, delicate meat. This perfectly cooked lobster forms the heart of our sandwich, bringing a refined sweetness and oceanic flavor that beautifully complements the other rich ingredients.
The magic of this **Lobster Croque Madame** truly unfolds in its layers of flavor and texture. We start with slices of hearty, rustic bread, toasted to a golden crisp. Each slice is then adorned with a tender slice of savory prosciutto, adding a subtle salty kick that perfectly complements the sweetness of the lobster. Next comes a generous mound of the chopped lobster meat, followed by a luxurious drizzle of our homemade Dijon béchamel sauce – a creamy, velvety blanket that binds all the components together. A blend of shredded mozzarella and Parmesan cheese creates a gooey, golden crust under the broiler, adding a depth of savory flavor. Finally, the crowning glory: a perfectly cooked sunny-side up egg, its warm, runny yolk ready to burst and mingle with the rich béchamel and lobster. This harmonious blend of tastes and textures makes for an utterly unforgettable meal, suitable for breakfast, brunch, lunch, or an elegant dinner. It’s a testament to how simple techniques can yield extraordinary results.

Tips for Perfecting Your Lobster Croque Madame
- Choosing Your Lobster: While fresh lobster is ideal, frozen lobster tails are a convenient and excellent option. Ensure they are fully thawed in the refrigerator overnight before use.
- Don’t Overcook the Lobster: The key to tender lobster is a very brief boil, just until it turns opaque. Overcooking makes it rubbery. The one to two-minute rule is critical.
- The Béchamel Sauce: Whisk constantly as you add the milk to the butter and flour roux to prevent lumps and ensure a smooth, creamy sauce. Dijon mustard adds a fantastic tang and depth.
- Bread Choice: Rustic, hearty bread holds up best to the moist ingredients. Sourdough or a good quality whole-grain loaf works wonderfully. Toasting it first adds texture and prevents sogginess.
- Broiling Carefully: Keep a close eye on the sandwiches under the broiler. Cheese melts quickly, and you want it golden and bubbly, not burnt.
- The Egg: A sunny-side up egg is traditional for Croque Madame, providing that iconic “hat” and rich, runny yolk. However, a gently poached egg can also be a delicious alternative.

Cook Time: 20 minutes
Ingredients:
- 4 lobster tails, rinsed, prepped
- 4 slices whole grain rustic bread, toasted
- 1 stick unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- salt and pepper to taste
- 1 tbsp Dijon mustard
- 1 celery stalk, chopped
- 1 shallot, chopped
- 2 garlic cloves, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme
- 1 tbsp lemon zest
- 1/2 cup sherry
- 2 tsp Old Bay Seasoning
- dash of hot sauce
- dash of Worcestershire sauce
- 8 slices prosciutto
- 1 1/4 cups shredded mozzarella
- 1/2 cup shredded Parmesan
- 4 large sunny-side up eggs
- Fresh tarragon chopped, for garnish
Directions:
- Preheat your broiler. Spray a baking sheet with non-stick cooking spray and place the bread slices on top. Spread each bread slice with about 1 tbsp of butter. Set aside.
- Bring a medium stock pot filled with salted water to a gentle boil. Add the lobster tails and boil them for about one to two minutes. Remove the lobsters and place them on a plate to cool before removing the flesh. Once cooled remove the flesh and roughly chop. Place the lobster into a large mixing bowl.
- Meanwhile, in a large saucepan melt 2 1/2 tbsp butter over medium heat. Whisk in the flour and gently pour in the milk creating a roux. Sprinkle with salt and pepper. Keep whisking until thick enough to coat the back of the spoon. Remove the skillet from the heat and stir in the Dijon mustard.
- In another large skillet, melt the remaining 3 1/2 tbsp butter over medium-high heat. Add the celery, shallot and garlic to the skillet. Saute until softened about two minutes. Stir in the parsley, thyme and lemon zest. Continue to cook for about a minute. Next, pour in the sherry and stir to combine. Keep stirring until the sherry has been absorbed. Remove the skillet from the heat and stir in the vegetable mixture with the lobster. Add in Old Bay seasoning, hot sauce, and Worcestershire. Take about 2/3 cup of the bechamel sauce and stir it into the lobster mixture.
- Take two slices of the prosciutto and place it on top of each bread slice. Divide the lobster mixture among the toast and then top each toast with a drizzle of bechamel sauce followed by mozzarella and Parmesan. Broil the toasts until the cheese has melted. Place the eggs on top and garnish with fresh tarragon.
