From the historic grandeur of Edinburgh, our expedition ventured northwest, leading us to the picturesque coastal town of Oban. Often hailed as the “Gateway to the Isles,” Oban lives up to its reputation with breathtaking natural beauty and a charming harbor. The serene waters of Oban Bay, dotted with ferries heading out to the Hebrides, create an incredibly tranquil atmosphere. While in Oban, we indulged in a fascinating tour of a local distillery, established way back in 1794. Learning about the intricate process of whisky-making, from malting to maturation, was a captivating experience, offering a true taste of Scottish craftsmanship. The highlight of our culinary experience in Oban was dining on incredibly fresh, locally sourced fish overlooking the bay at the renowned Waterfront Fishouse. The subtle flavors of the sea, perfectly prepared, were a testament to Scotland’s rich seafood bounty.

Leaving Oban, our adventure continued north with a quick, scenic pit-stop at the iconic Castle Stalker. This magnificent four-story tower, dramatically set on a tidal islet against a backdrop of mountains and water, is a truly photographic marvel. Unfortunately, strong winds prevented us from taking the much-anticipated tour (a definite reason to return!), but even from a distance, its stoic beauty was captivating. We pressed on, winding our way north along the scenic A82, a road renowned for its stunning vistas, towards Inverness. Here, we enjoyed a luxurious dinner at the lovely Kingsmills Hotel, a haven of comfort after a day of exploration. For all the fans out there, I must confess, I haven’t spotted James Fraser yet! But fear not, my “Outlander” radar will be on full alert tomorrow as we continue our explorations! Our next exciting destination is Dunblane, where we eagerly anticipate some tranquil salmon fly fishing. It’s been an incredible whirlwind of sights and experiences, making for a truly memorable Scottish escapade.

Loaded Fried Chicken Curry Tacos with Ginger Aioli

These unique tacos combine crispy fried chicken marinated in a vibrant curry-coconut mixture with a refreshing homemade ginger aioli, all nestled in warm tortillas with fresh garnishes. It’s an unforgettable fusion experience!

Ingredients:

For the Crispy Curry Chicken Tacos:

1/2 cup high-quality vegetable oil (or canola oil) for frying
1 pound boneless, skinless chicken strips (or chicken breast cut into strips)
1 (15oz) can unsweetened full-fat coconut milk
1 large egg, lightly whisked
1 cup creamy buttermilk
1 tablespoon fragrant curry powder (adjust to your spice preference)
2 cups all-purpose flour
Fresh red cabbage, finely shredded, for garnish
Thinly sliced jalapeño rounds, for a spicy kick (optional)
Thinly sliced serrano pepper rounds, for extra heat (optional)

Directions for Preparation:

For the Crispy Curry Chicken Tacos:

Begin by preparing your chicken. In a large mixing bowl, combine the buttermilk, whisked egg, coconut milk, chicken strips, curry powder, and a generous seasoning of salt and pepper. Ensure the chicken is fully submerged in this flavorful marinade. Allow the chicken to marinate at room temperature for at least 15 minutes to absorb all the wonderful flavors. While the chicken marinates, pour the vegetable oil into a large, heavy-bottomed Dutch oven or deep skillet. Preheat the oil over medium-high heat until it reaches about 350-375°F (175-190°C), or until a small sprinkle of flour sizzles immediately. Next, place the all-purpose flour in a separate shallow bowl. Using a pair of tongs, carefully dredge each marinated chicken strip through the flour, ensuring it’s completely coated. Gently shake off any excess flour to achieve a light, crispy crust. Carefully place the floured chicken strips one at a time into the hot vegetable oil, being cautious not to overcrowd the pan, which can lower the oil temperature and result in soggy chicken. Fry the chicken on the first side for approximately three minutes, or until it achieves a beautiful golden-brown color. Flip each piece and fry for an additional two minutes, or until cooked through and golden on all sides. The internal temperature should reach 165°F (74°C). Remove the perfectly fried chicken from the Dutch oven and place it on a plate lined with paper towels to drain any excess oil. Immediately sprinkle with a touch more kosher salt while still hot. Repeat this process until all chicken strips are fried to crispy perfection. To serve these incredible tacos, warm your flour tortillas, then lay a few golden-brown chicken strips inside each.
