3 cups crusty day-old bread, cut into one-inch cubes (sourdough or rustic white bread works best)
1/4 cup olive oil, divided
2 tablespoons Chipotle Tabasco
1 lb flank steak, trimmed
9 large shrimp, shells removed, deveined
1 pint grape tomatoes, halved (or 2-3 medium heirloom tomatoes, diced)
1 English cucumber, sliced into half moons
1/2 small red onion, sliced thinly
2 tablespoons fresh chives, finely chopped, for garnish
1/4 cup fresh basil leaves, torn or chopped, for garnish
1 cup fresh okra, chopped into 1/2-inch pieces
A splash of good quality balsamic vinegar (if desired, for a tangy finish)
Salt and freshly ground black pepper to taste

Directions:

1. Prepare the Croutons: Preheat your oven to 400 degrees F (200 degrees C). Lightly spray a large baking sheet with non-stick cooking spray. In a large bowl, toss the bread cubes with 2 tablespoons of olive oil, a pinch of salt, and a dash of black pepper until evenly coated. Spread the cubes in a single layer on the prepared baking sheet. Bake for about 10-12 minutes, or until they are golden brown and crisp. Keep a close eye on them to prevent burning. Remove from the oven and set aside to cool completely.
2. Grill the Steak: While the croutons cool, prepare the flank steak. Pat the flank steak dry with paper towels. Evenly rub the Chipotle Tabasco sauce over both sides of the steak, then season generously with salt and freshly ground black pepper. Preheat a grill to medium-high heat. Once hot, place the steak on the grill. Cook for approximately five to six minutes on the first side to achieve a good sear. Flip the steak and cook for an additional three to four minutes, or until it reaches your desired doneness (medium-rare is usually slightly pink in the middle). Remove the steak from the grill and let it rest on a cutting board for at least 5-10 minutes before slicing against the grain into thin strips. Resting the steak is crucial for juicy results.
3. Cook the Shrimp: Next, preheat a large skillet (cast iron works wonderfully) over medium-high heat. Season the cleaned and deveined shrimp with salt and pepper. Add the remaining 2 tablespoons of olive oil to the hot skillet. Once the oil shimmers, add the seasoned shrimp in a single layer. Cook the shrimp for about one minute per side. They cook very quickly; as soon as they turn pink and begin to curl into a “C” shape, remove them from the skillet to prevent overcooking.
4. Assemble the Salad: In a large, attractive serving bowl, combine the cooled croutons, sliced cucumbers, halved grape tomatoes, cooked shrimp, sliced steak, chopped okra, and thinly sliced red onion. Add the chopped chives and basil.
