Among the many wonderful cuts of lamb, the lamb loin chop holds a special place in our dinner rotation. Often referred to as a “mini T-bone steak” due to its distinctive shape, the loin chop is cut from the hindsaddle of the lamb. This particular section is renowned for yielding incredibly tender and juicy meat, making it a prime candidate for quick, high-heat cooking methods like grilling. Its appealing marbling ensures a moist and flavorful result every time.
Next time you’re at the grocery store or butcher shop, make sure to pick up a few lamb loin chops. A helpful hint for identification: look for that characteristic “T”-shaped bone running through the center of the meat. This cut offers a perfect balance of lean meat and just enough fat to render during cooking, enhancing its succulence. If loin chops aren’t available, don’t fret! Sirloin chops are an excellent alternative, offering a similar tenderness and robust flavor profile that grills beautifully.

Mastering the Grill: Perfectly Seared Lamb Loin Chops
You might be asking, “How do I achieve that perfect sear and tender interior when grilling lamb loin chops?” It’s simpler than you think, with a few key steps ensuring a flawless result:
- Bring to Room Temperature: Before your grill even sees a flame, the most crucial step is to remove the lamb loin chops from the refrigerator and let them rest on the counter for at least an hour (or up to two hours) prior to cooking. This seemingly small step is vital for even cooking. Cold meat hits a hot grill and sears on the outside while the inside remains cool, leading to uneven doneness. Allowing it to reach room temperature ensures the heat penetrates more uniformly, resulting in a perfectly cooked chop from edge to center.
- Season Generously: Once at room temperature, pat the lamb chops dry with paper towels. This helps achieve a better sear. Then, season them liberally with good quality coarse salt and freshly cracked black pepper. While these are the basics, feel free to enhance the flavor with a sprinkle of garlic powder, dried rosemary, thyme, or even a touch of smoked paprika for added depth.
- Preheat Your Grill: A hot grill is essential for a beautiful sear. Preheat your grill to medium-high heat. Ensure the grates are clean to prevent sticking and for those coveted grill marks. You can lightly oil the grates before placing the lamb, too.
- Grill to Perfection: Place the seasoned loin chops directly on the preheated grill. Cook them for approximately 2-3 minutes per side, turning them every couple of minutes to ensure even cooking and beautiful browning. For ideal doneness, use an instant-read meat thermometer inserted into the thickest part of the chop, avoiding the bone.
- For Medium-Rare: Aim for 130-135°F (54-57°C)
- For Medium: Aim for 135-140°F (57-60°C)
- For Medium-Well: Aim for 140-145°F (60-63°C)
- The All-Important Rest: Once the lamb chops reach your desired internal temperature, remove them from the grill immediately. Transfer them to a clean cutting board or plate, loosely tent them with foil, and let them rest for at least 5-10 minutes. This resting period is critical! It allows the juices, which have been driven to the center of the meat during cooking, to redistribute throughout the chop. Skipping this step often results in juices running out when you cut, leaving you with dry meat. During this rest, the internal temperature will also rise by a few degrees due to carry-over cooking, reaching a final temperature of around 145°F for medium-rare/medium.
Remember, lamb is best enjoyed not overcooked, so aiming for medium-rare to medium will yield the most tender and flavorful results.

Ingredients:
- 8 American Lamb loin chops
- Salt and freshly ground black pepper to taste
- 2/3 cup fresh spinach leaves
- 1/3 cup fresh mint leaves
- 1/3 cup fresh parsley leaves
- 1 tbsp lemon zest (from about 1 large lemon)
- 1 tsp crushed red pepper flakes (adjust to your spice preference)
- 1 large garlic clove
- 1/3 cup extra virgin olive oil
Directions:
- Prepare the Lamb Chops: Place the American lamb loin chops on a plate or baking sheet. Pat them thoroughly dry with paper towels. Allow the lamb to come to room temperature by letting them sit on the counter for at least 1 hour (up to 2 hours) before grilling. This ensures even cooking. Season generously with salt and pepper.
- Make the Spinach Salsa Verde: In a blender or food processor, combine the spinach leaves, mint, parsley, lemon zest, crushed red pepper flakes, the garlic clove, and 1/3 cup olive oil. Puree until the mixture is smooth and vibrant green. Taste and adjust seasoning with salt and pepper as needed. Set aside.
- Grill the Lamb: Preheat your grill to medium-high heat. Once hot, place the seasoned American Lamb loin chops on the grill grates. Cook, turning every 2-3 minutes, until well browned on both sides and cooked to your desired doneness. For an accurate reading, insert an instant-read thermometer into the thickest part of a chop (avoiding the bone) until it registers approximately 135°F (57°C) for medium-rare.
- Rest and Serve: Remove the lamb chops from the grill and transfer them to a clean cutting board or plate. Loosely tent them with foil and let them rest for 5-10 minutes. This allows the juices to redistribute, ensuring tender and juicy lamb. The internal temperature will rise a few degrees during this rest. Serve the Seared Lamb Loin Chops immediately, drizzled generously with the fresh Spinach Salsa Verde.
