Surprise! A heartfelt “Happy Baby Shower” to the amazing Liz!
Today is a truly joyous occasion as we come together to celebrate Liz and the upcoming arrival of her second bundle of joy! My excitement is overflowing, a genuine wave of happiness for my dear friend. Liz, the creative force and talented author behind the renowned healthy food blog, The Lemon Bowl, is not just an inspiration in the culinary world but also a cherished friend.
I had the distinct pleasure of meeting Liz in person during our unforgettable trip to BlogHer Food this year. Beyond sharing a passion for food and blogging, we even navigated the famous (or infamous!) “bardo” as roommates. How we managed to survive a fun-filled foodie weekend in vibrant Austin, all while enduring the mysterious #condocurse, remains one of life’s delightful mysteries. That experience truly solidified a bond that I cherish deeply.
Liz is an absolute treasure. Her wisdom, spanning life advice, invaluable food blogging insights, and an incredible knack for general good-natured shenanigans, makes me endlessly grateful to call her my friend. She’s the kind of friend you can count on, no matter the distance or circumstance. But her brilliance doesn’t stop there; her recipes are nothing short of phenomenal. I find myself utterly captivated by her exquisite garlic-soy marinade, her perfectly crafted steamed pork dumplings, and her incredibly flavorful chicken shawarma. Just thinking about the endless culinary possibilities she creates makes my stomach rumble! Furthermore, Liz is a fellow enthusiast of all things healthy and delicious, which naturally makes us kindred spirits in the kitchen.
In honor of this special occasion, a vibrant community of food bloggers and I are coming together to “cater” this virtual baby shower. For my part, I decided to go the appetizer route, knowing exactly what I wanted to prepare for the queen of lemons herself. I envisioned something visually stunning, deliciously healthy, and perfectly aligned with the citrusy celebration. The result? These adorable lemon cups, filled with a creamy, flavorful cauliflower mash. Aren’t they just the cutest and most charming little things? Oh, if only I could bottle up sunshine and fill them with pure joy without looking utterly ridiculous, I would! Instead, I opted to keep things wholesome and whipped up a batch of my signature cauliflower mashed “potatoes.”
For those who might be unfamiliar with cauliflower mashed potatoes, they are an absolutely fantastic and flavorful lower-carb alternative to traditional mashed potatoes. The beauty of this dish is its simplicity: you prepare them in much the same way as you would regular mashed potatoes, and honestly, the taste is remarkably similar – rich, creamy, and satisfying! It’s a culinary revelation that allows you to enjoy a beloved comfort food with a healthier twist. This dish is not only delicious but also beautifully presented in the natural lemon cups, adding an elegant and thematic touch to Liz’s shower spread. It’s an ideal choice for guests who appreciate wholesome ingredients and creative culinary presentations.

Preparing these delightful lemon cups filled with creamy cauliflower mash is surprisingly simple and immensely rewarding. It’s a perfect dish for entertaining, offering both elegance and a healthy alternative that guests will adore. The natural brightness of the lemon complements the subtle flavors of the cauliflower, creating a harmonious and refreshing appetizer. Let’s dive into the recipe that brought this creation to life:

Cauliflower Mashed “Potatoes” in a Lemon Cup with Smoked Paprika
Prep Time: 20 minutes
Cook Time: 15 minutes
Ingredients:
1 head cauliflower, cut into florets
3 tablespoons milk
1 tablespoon unsalted butter
2 tablespoons sour cream
1 teaspoon garlic powder
Salt and freshly ground black pepper, to taste
8 lemons
Smoked paprika, for garnish
Fresh chives, chopped, for garnish
Directions:
1. Prepare the Cauliflower: Place the cauliflower florets in a large saucepan and cover with water. Bring the water to a boil over medium-high heat and cook until the cauliflower is very tender, which usually takes about 10 minutes. Once tender, carefully strain the cauliflower, ensuring all excess water is removed.
2. Create the Mash: Transfer the strained cauliflower florets to a food processor. Add the milk, unsalted butter, sour cream, garlic powder, and a generous pinch of salt and pepper. Process until the mixture is smooth and creamy. If the mash is too thick, add a little more milk, one tablespoon at a time, until you reach your desired consistency. Taste and adjust seasonings as needed.
3. Form the Lemon Cups: Take each lemon and slice off approximately a quarter of the way down from the top, creating a stable base and an opening. Using a small, sharp knife, carefully run it along the inner edges of the lemon rind to loosen the flesh. Then, scoop out all the lemon flesh and pulp, leaving only the hollow rind. Pat the inside of each lemon cup dry with a paper towel to remove any residual juice.
4. Assemble and Garnish: Spoon the cauliflower puree into a Ziploc bag. Snip off one of the bottom corners of the bag to create a piping tool. Carefully pipe the cauliflower mashed “potatoes” into each prepared lemon cup. Garnish each serving with a sprinkle of smoked paprika and freshly chopped chives for color and extra flavor.
