Crockpot Pulled Pork with Coleslaw from Lauren’s Latest eCookbook
Prep Time: 20 minutes
Cook Time: 6 hours
Ingredients:
for the pork:
1 cup beef broth
2 1/2 cups barbecue sauce
3 lbs boneless pork shoulder
Salt and pepper, to taste
1/2 onion, diced
2 garlic cloves, grated
1/3 cup packed brown sugar
1 tablespoon yellow mustard
for the coleslaw:
1 (16oz.) bag coleslaw mix
1/2 small sweet onion, finely diced
1 cup mayonnaise
1/4 cup white vinegar
3 tablespoons granulated sugar
Salt and pepper, to taste
6 Kaiser rolls (or your preferred dinner rolls)
Directions:
For the Pork:
1. In a cold crockpot, stir together the beef broth and 1 cup of barbecue sauce.
2. Season the boneless pork shoulder generously with salt and pepper. Place the seasoned pork into the crockpot, then sprinkle the diced onions over the top.
3. Cover and cook on low for 6 hours or on high for 4 hours. The pork is done when it is fork-tender and can be easily shredded.
4. Carefully remove the cooked pork from the liquid in the crockpot. Pour off any excess fat from the cooking liquid and reserve half of the remaining liquid.
5. Shred the pork using two forks, discarding any visible fat as you go. Return the shredded pork to the warm crockpot.
6. Once all the meat is shredded, stir in the grated garlic, the remaining barbecue sauce (1 1/2 cups), brown sugar, and yellow mustard.
7. Stir in the reserved cooking liquid as needed to ensure the meat remains moist and flavorful. Keep the pulled pork warm in the crockpot until ready to serve.
For the Coleslaw:
1. In a large bowl, combine the coleslaw mix with the finely diced sweet onion. Set aside.
2. In a separate small bowl, whisk together the mayonnaise, white vinegar, granulated sugar, salt, and pepper until well combined to create the dressing.
3. Pour the prepared dressing over the cabbage and onion mixture. Toss gently to ensure all ingredients are evenly coated.
4. Store the coleslaw in the refrigerator until ready to serve, allowing the flavors to meld.
