Today is a truly special day, marking the birthday of someone incredibly dear to us! For those who follow our adventures here at Climbing Grier Mountain (CGM), you’ll undoubtedly recognize him. He’s the other half of this wild, wonderful operation – the unwavering support, the creative muse, and often, the willing taste-tester behind many of our culinary explorations.
You might have spotted him showcasing his impressive abominable snowman beard, lending his hands as a model for our most delicious sandwich creations, or perhaps sporting a classic “Midwest Side” t-shirt. More recently, he even channeled his inner rockstar, perfectly embodying the legendary guitarist, Slash. Yes, today, we celebrate Mr. B!
However, I must confess, Mr. B has been a bit “meh” about his birthday this year. Typically, he’s the one leading the charge with a celebratory “let’s rock out with our cock-a-doodle-doo out!” attitude. But this year, the enthusiasm seems a little muted. And I think I know why: he’s turning 35.
The Big 3-5: Navigating a Milestone Birthday
For those of you who have already celebrated your 35th birthday, was it a daunting experience? Did it feel like a significant step closer to the big 4-0? Perhaps Mr. B’s lack of enthusiasm is entirely justified. I imagine I’d be an absolute wreck if I were in his shoes. Note to self: avoid turning 35 at all costs! All jokes aside, reaching such a milestone can often bring moments of reflection and, for some, a touch of trepidation. It’s a natural human reaction to contemplate the passage of time, but it’s also an incredible opportunity to celebrate all the life experiences and wisdom gained.
Despite his somewhat subdued spirits, I am determined to turn that frown upside down and make this birthday truly memorable. My plan for dinner is a grand feast: succulent brisket, perfectly roasted taters, and a savory brussel sprout hash. And for the pièce de résistance, I’m pulling out all the stops – and my big-girl baking gear – to attempt his all-time favorite birthday cake once more: the legendary Texas Sheet Cake. Should my ambitions exceed my baking prowess, I have a delicious backup plan: German chocolate cupcakes standing by, ready to save the day!

Whole Wheat Pancakes with Balsamic Caramel Apples
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
for the whole wheat pancakes:
1 cup whole wheat flour
3 1/2 teaspoons baking powder
1 egg
1 teaspoon kosher salt
1 1/4 cups whole milk
1 tablespoon granulated sugar
3 tablespoons unsalted butter, melted
1 1/2 cups whole milk ricotta
Confectioners sugar, dusting
Maple syrup, garnish
for the balsamic caramel apples:
3 tablespoons unsalted butter
3 large Granny Smith apples, peeled, cored, sliced thinly
1/2 cup granulated sugar
2 tablespoons balsamic vinegar
Directions:
for the whole wheat pancakes:
Preheat a skillet or griddle to medium heat. In a large bowl, combine the whole wheat flour, baking powder, egg, kosher salt, granulated sugar, whole milk, and melted butter. Whisk until just combined; be careful not to overmix, as this can lead to tough pancakes. A few lumps are perfectly fine! Pour about 1/4 cup of the batter per pancake onto the hot skillet. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface before flipping. Repeat the process until all the batter has been used. To serve, spread a dollop of creamy ricotta cheese on the tops of the warm pancakes, stack them high, and generously drizzle with maple syrup. Dust with confectioners’ sugar for a beautiful finish. Finally, crown each stack with a generous serving of the warm balsamic caramel apples.
for the balsamic caramel apples:
In a large skillet, melt the unsalted butter over medium heat. Add the thinly sliced Granny Smith apples and cook for about 3 to 5 minutes, stirring occasionally, until they begin to soften and turn a light golden brown. Sprinkle the granulated sugar over the apples and toss to coat evenly. Continue to cook for another 2-3 minutes, allowing the sugar to melt and caramelize slightly. Pour in the balsamic vinegar, stir well, and bring the mixture to a gentle simmer. Continue simmering the apples for about five minutes, or until the sauce has thickened and coats the apples beautifully. Remove the skillet from the heat immediately. The tangy balsamic beautifully complements the sweet apples, creating a rich, flavorful topping.
