Can I get a high-five? Absolutely! There’s something undeniably uplifting about that simple gesture, and today, we have double the reason to celebrate. Firstly, a high-five always has a magical way of instantly brightening anyone’s day, spreading a little bit of positive energy. Secondly, and perhaps even more thrilling, it’s a wonderfully short work week! HOLLA! The excitement is palpable as I prepare to embark on an exciting adventure to Traverse City, Michigan, starting tomorrow. This trip materialized rather quickly, but I couldn’t be more thrilled. I’ll be joining a select group of fabulous food bloggers, collaborating with the dedicated individuals who organize the renowned National Cherry Festival. It’s truly incredible to think that this festival has been a cherished tradition since 1925, evolving into one of Michigan’s most iconic summer events!

Our upcoming weekend in Traverse City promises to be an unforgettable whirlwind of delightful experiences. Our itinerary is packed with engaging activities, including immersing ourselves in the vibrant atmosphere of the National Cherry Festival itself, which showcases the region’s agricultural bounty and rich heritage. We’ll also be visiting the picturesque Black Star Farms Winery, nestled amidst stunning vineyards, where we anticipate sampling exquisite local wines and enjoying the serene Michigan landscape. Dinner reservations are set for the elegant Boathouse, offering breathtaking waterfront views and an exceptional culinary journey. To cap it all off, we’ll have the honor of viewing the spectacular Cherry Royale Parade, a highlight of the festival known for its vibrant floats and festive spirit. This marks my very first journey to Michigan, and I’m eager to explore all that this beautiful state has to offer. If any of you have secret gems, must-see sights, or essential experiences in Traverse City or the surrounding areas, please don’t hesitate to share your recommendations in the comments below! Your insights would be immensely valuable in making this trip even more memorable.

Before I dive headfirst into a bucket of delicious cherries and immerse myself in the festival’s delights, let’s take a moment to discuss these phenomenal Teriyaki Chicken and Shishito Skewers. With all the travel plans on the horizon and knowing I’ll be away from home and Mr. B, I always make an effort to ensure our fridge is well-stocked with easy-to-prepare meals. My goal is to leave him with delicious options he can effortlessly reheat or, even better, toss directly onto the grill. You see, for some reason, the oven remains a rather “mystical creature” in his culinary world – a tool he rarely ventures to use. Understanding this charming quirk, I realized that if I could leave him with a few skewers, already prepped and ready to be thrown on the grill, I would absolutely be winning at this “spouse game” of thoughtful meal preparation! It’s all about making life simpler and more enjoyable for everyone, especially when routines are disrupted by exciting travel plans.

Preparing these Teriyaki Chicken and Shishito Skewers is wonderfully straightforward, making them an ideal choice for busy weeknights or relaxed weekend gatherings. While you can certainly customize them with your favorite proteins and vegetables, I’ve found a deep appreciation for the unique qualities of shishito peppers. They contribute a fantastic texture and a subtle, intriguing hint of spice that elevates the entire dish. Don’t worry, these aren’t “hot-hot” peppers; they offer a mild, slightly smoky flavor with just a playful whisper of heat, making them enjoyable for almost any palate. Paired with the rich umami of teriyaki-marinated chicken, the sweetness of bell peppers, and the savory bite of red onions, you have a perfectly balanced, healthy, and incredibly flavorful meal. It’s a wholesome, ready-to-go option that comes together in mere minutes on the grill, embodying convenience without compromising on taste. This simple combination ensures that a delightful and nourishing dinner is always within reach.

Now, can I get another high-five? Because not only are these skewers incredibly easy and delicious, but they also offer fantastic versatility. You can prepare them ahead of time, making them perfect for meal prepping. Marinating the chicken overnight ensures maximum flavor penetration, turning each bite into an explosion of sweet and savory notes. For those who enjoy a bit of culinary adventure, consider adding other vegetables like zucchini, cherry tomatoes, or even pineapple chunks to the skewers. Pineapple, in particular, caramelizes beautifully on the grill, adding a delightful sweetness that complements the teriyaki perfectly. The key to successful grilling lies in even cooking, so cutting your ingredients into roughly similar sizes is crucial. This ensures that everything cooks through at the same rate, preventing some pieces from overcooking while others remain underdone. These skewers are not just a meal; they’re a canvas for your culinary creativity, promising a healthy and satisfying experience every time you fire up the grill.

The beauty of these Teriyaki Chicken Skewers isn’t just in their taste, but also in their vibrant visual appeal. The medley of colors from the orange, yellow, and red bell peppers, combined with the distinctive green of the shishito peppers and the golden-brown char of the chicken, makes for an Instagram-worthy dish that’s almost too pretty to eat. Almost! Beyond their good looks, these skewers are a fantastic source of lean protein and an abundance of vitamins from the fresh vegetables. It’s a meal that truly nourishes the body while delighting the senses. So, whether you’re a seasoned grill master or a novice looking to try something new, these skewers are a foolproof way to enjoy a delicious, wholesome meal outdoors. They embody everything wonderful about summer cooking: simplicity, freshness, and the irresistible smoky flavor that only a grill can provide. So go ahead, give yourself a high-five for making such a fantastic choice!

Teriyaki Chicken and Shishito Skewers

Yield: Serves 4

Prep Time: 1 hour

Cook Time: 45 minutes

Ingredients:

2 cups teriyaki marinade (*any kind will do!)
1 1/2 pounds one-inch chicken breast cubes
3 cups yellow peppers, cut into one-inch square slices
3 cups orange peppers, cut into one-inch square slices
3 cups red onions, cut into one-inch square slices
3 cups whole shishito peppers
Olive oil
Salt and pepper to taste
Parsley, garnish
Lime juice, garnish

Directions:

1. In a gallon-sized Ziploc bag, add the teriyaki marinade along with the chicken cubes. Place in the fridge for at least an hour or ideally, overnight, to ensure the chicken absorbs maximum flavor. Meanwhile, soak 8 bamboo skewers in water for at least 30 minutes to prevent them from burning on the grill.
2. To assemble each skewer, begin by threading one orange pepper slice, followed by one yellow pepper slice, then a red onion slice, two shishito peppers, and finally, one chicken cube. Repeat this pattern again on the same skewer, filling it to about two-thirds of its length to allow for even cooking. Continue this process with the remaining skewers. Don’t worry if you have leftover ingredients; simply grill them separately or use them in another dish as desired.
3. Preheat your grill to medium-high heat. Drizzle the assembled skewers generously with olive oil, ensuring they are well coated, then sprinkle them with salt and freshly ground black pepper to taste.
4. Carefully place the prepared skewers on the hot grill. Cook, rotating each side every three to four minutes, until the chicken is thoroughly cooked through (internal temperature of 165°F or 74°C) and the vegetables are tender-crisp with appealing grill marks.
5. Remove the skewers from the grill and let them rest for a few minutes before serving. Garnish with fresh chopped parsley and a squeeze of fresh lime juice to brighten the flavors.
