Cauliflower Bacon Soup

Yield: Serves 4

Prep Time: 30 minutes

Cook Time: 1 hour

Ingredients:

5 strips uncooked bacon, diced small
1 1/2 cups chopped yellow onion (approximately 1 large)
3/4 cups chopped celery (approximately 2 ribs)
kosher salt
1/4 cup dry white wine
2 cloves garlic, smashed
1 head cauliflower, chopped
3 cups chicken stock, preferably homemade
1/2 cup whole milk (plus more to thin if desired)
Ground black pepper

Directions:

In a large Dutch oven or heavy-bottom saucepan, begin by rendering the fat from the diced bacon over low heat for several minutes. Allow the bacon to slowly release its fat until a solid layer forms in the pan. Increase the heat to medium-low and continue cooking the bacon, stirring occasionally, until it becomes wonderfully crisp and golden brown. Carefully use tongs to remove the cooked bacon from the pan, transferring it to a plate lined with paper towels to drain any excess fat. This crispy bacon will be used later as a delicious garnish. Discard all but approximately 3 tablespoons of the rendered bacon fat from the pan. Don’t worry if you have slightly less; some bacon brands are leaner than others.
Keep a small cup of water nearby for deglazing. Add the chopped yellow onion and celery to the pan with the reserved bacon fat, along with a pinch of kosher salt. Sweat the vegetables over medium-low heat for several minutes. As they cook, you’ll notice a flavorful brown glaze beginning to form on the bottom of the pan. This is called fond, and it’s full of flavor. Add 1 tablespoon of the reserved water to deglaze the pan, gently scraping the bottom with a wooden spoon to incorporate these flavorful brown bits back into the vegetables. Repeat this deglazing process as needed for about 10 minutes, until the onions and celery have softened and caramelized nicely, taking on a beautiful golden hue. Finally, deglaze the pan with the dry white wine, scraping up any remaining fond to ensure all the delicious flavor is incorporated.
Add the smashed garlic and the chopped cauliflower florets to the pan. Turn the heat to medium and cook for approximately 5 minutes, stirring periodically, until the cauliflower begins to soften slightly. Pour in the chicken stock, preferably homemade for the best flavor, and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and allow the soup to simmer for 60 minutes. This slow simmer will allow the cauliflower to become very tender and for the flavors to meld beautifully.
Carefully ladle the hot soup into a blender, working in batches if necessary to avoid overfilling and ensure safety. Puree the soup until it achieves a wonderfully silky-smooth and creamy consistency. Return the pureed soup to the pan over low heat. Stir in the whole milk. Season the soup generously with salt and freshly ground black pepper to taste, adjusting as needed. Briefly reheat the reserved crispy bacon in a dry sauté pan for a minute or two to restore its crunch. Serve the hot soup in bowls, garnishing each serving with a sprinkle of the crispy bacon.
