How was your weekend, by the way? And for all the mothers out there, I hope your Mother’s Day was as special and relaxing as mine.

As my first official Mother’s Day, it was truly a day to cherish. My main request was simple: no house projects! Instead, I wanted to introduce our sweet Charlie to the breathtaking beauty of the Rocky Mountains. It was high time this little homegirl experienced some real mountain air!

We started the day with a delightful brunch by the river, savoring every moment before embarking on a small, refreshing hike. The crisp mountain air invigorated us, and the scenery was simply stunning. Later, back at home, a craving for classic fried chicken and fries hit, so we indulged in some takeout. The entire day felt effortless and utterly enjoyable. I admit, I was half-expecting Mother’s Day snow, as Colorado is notorious for it, but thankfully, the weather was absolutely perfect.

  • 1 lb large shrimp, peeled and deveined
  • Salt and freshly ground black pepper to taste
  • 1 1/4 cups plain breadcrumbs
  • 1/2 tsp Old Bay seasoning
  • 1/2 cup mayonnaise
  • 2 tbsp milk
  • 4 tsp hot sauce (Tabasco recommended for authentic flavor!)
  • 1 large head iceberg lettuce, cored and cut into 4 thick wedges
  • Fresh chopped parsley, for garnish
