Ingredients:
For the Beef Puttanesca:
1 pound ground sirloin (90% lean)
1/2 medium yellow onion, thinly sliced (about 1/2 cup)
3 garlic cloves, minced
1 (15-ounce) can diced tomatoes, undrained
1 (15-ounce) can cannellini beans, rinsed and drained
4 canned artichoke hearts (in water or brine), quartered
1 1/3 cups chopped pitted Kalamata olives
2 tablespoons capers, rinsed and drained
1/2 cup packed chopped fresh basil leaves, plus more for serving
1/4 cup grated Parmesan cheese for serving
For the Garlic Bread:
1/2 of a standard-size baguette or 1 semi-baguette (approx. 12 inches long)
2 tablespoons extra-virgin olive oil
3 garlic cloves, minced
1 tablespoon dried oregano
2 teaspoons crushed red pepper flakes
Pinch of salt
Directions:
For the Beef Puttanesca:
- In a 12-inch nonstick skillet set over medium-high heat, sauté the ground sirloin, breaking it up with a rubber spatula, until thoroughly browned, about 6 to 8 minutes. Using a slotted spoon, transfer the cooked beef to a plate and tent loosely with foil to keep it warm.
- Using the same skillet, add the thinly sliced onion to the beef drippings and cook, stirring frequently, until the onion begins to soften, about 2 to 3 minutes. Add the minced garlic and cook, stirring constantly, until it becomes fragrant, about 30 seconds. Be careful not to burn the garlic.
- Add the diced tomatoes along with their juices to the skillet and bring the mixture to a gentle simmer. Stir in the rinsed and drained cannellini beans and continue to simmer for 3 minutes, allowing the flavors to meld.
- Stir in the quartered artichoke hearts, chopped Kalamata olives, and rinsed capers. Return the browned ground beef to the pan and mix well. Finally, stir in the 1/2 cup of fresh basil leaves. Reduce the heat to low while you prepare the garlic bread.
For the Garlic Bread:
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Slice the baguette in half lengthwise. Then, cut each half widthwise to create four roughly 6-inch sections. Place these baguette pieces, cut sides up, on a baking sheet.
- In a small nonstick skillet or saucepan, heat the 2 tablespoons of olive oil over medium heat. Add the minced garlic and stir constantly until the garlic is just faintly golden and wonderfully fragrant, about 1 to 2 minutes. Lower the heat if necessary to prevent the garlic from burning. Immediately remove the pan from the heat and pour the garlic oil into a small bowl.
- In a separate small bowl, combine the dried oregano, crushed red pepper flakes, and a pinch of salt.
- Using a pastry brush, generously brush each cut side of the baguette pieces with the prepared garlic oil. Then, liberally sprinkle the oregano-pepper-salt mixture over each piece.
