Avocado and Crab Sliders with Lemon Aioli

Yield: Makes 12 sliders

Prep Time: 10 minutes

Cook Time: 5 minutes

Ingredients:

for the sliders:
2 large ripe avocados
1 1/2 cups lump crab meat (fresh or canned, drained well)
3 to 4 small tomatoes, thinly sliced
A generous splash of fresh lemon juice
Salt and freshly ground black pepper to taste
12 Hawaiian sweet slider buns

for the lemon aioli:
1 cup good quality mayonnaise
Zest of 1 whole lemon (about 1-2 teaspoons)
1 tablespoon fresh lemon juice
1 small garlic clove, finely minced (or 1/2 teaspoon garlic powder)
Salt and freshly ground black pepper to taste

Directions:

For the Sliders:
In a medium-sized bowl, gently mash the ripe avocados with a fork. Season with a pinch of salt and pepper. Add the lump crab meat to the mashed avocado and stir gently to combine, being careful not to break up the crab too much. Squeeze in a splash of fresh lemon juice; this will not only brighten the flavors but also help prevent the avocado from browning.
