3 cups baby spinach leaves
8 ounces dry salami, casing removed, cut into 1/2-inch cubes
1/2 teaspoon ground nutmeg
Zest of small orange
4 large eggs

Directions:

1. Cook bacon in a large skillet over medium-high heat until crisp. Using a slotted spoon, remove the crispy bacon from the pan and place it on a paper towel-lined plate to drain. Reserve a tablespoon or two of the bacon fat in the skillet for added flavor, or discard if preferred.

2. Add the chopped sweet potatoes to the same skillet. Season with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
