Experience a Flavorful Blast from the Past: Korean Chicken Salad Lettuce Cups

In a world constantly looking forward, sometimes the most delightful surprises come from looking back. And lately, it seems the 90s are making an undeniable comeback, not just in fashion but also in our desire for comfort with a modern twist. Just yesterday, while strolling downtown, I was captivated by a striking sight: several individuals sporting styles straight out of a 90s fashion magazine. Think leather mini-skirts paired with tucked-in baseball tees, oversized plaid shirts, sturdy Doc Martens, and even classic denim overalls. It was a vibrant reminder of a decade defined by its eclectic and unapologetically bold style, prompting a nostalgic smile.

The Game-Changing Ingredient: Gochujang

What sets this chicken salad apart, elevating it far beyond any traditional recipe, is the absence of mayonnaise and the star presence of Gochujang. For those unfamiliar, Gochujang is a foundational ingredient in Korean cuisine – a fermented red chili paste that delivers a complex profile of sweet, savory, and spicy flavors. It’s not just heat; it’s a profound depth of umami that transforms ordinary dishes into something truly special. While it offers a delightful kick, it’s generally a nuanced spice, so you won’t be breathing fire. Instead, it imparts a rich, multidimensional flavor that is both intriguing and incredibly addictive. This unique paste adds an authentic Korean essence, turning a simple chicken salad into an exotic and unforgettable meal.

Gochujang’s versatility extends beyond just this salad; it’s fantastic in marinades, stews, dipping sauces, and even dressings. Its fermented nature also contributes to its depth, offering a subtle tang that balances the sweetness and heat. In this recipe, Gochujang binds the ingredients together, creating a luscious, flavorful coating for the chicken and vegetables without relying on heavy oils or creams. It’s a healthier, more vibrant approach to dressing your salad, ensuring every bite is packed with dynamic flavor.

Korean Chicken Salad Lettuce Cups

Yield: Serves 4 to 6

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/2 cup toasted pine nuts
  • 1/4 cup water
  • 2 tbsp yellow mustard
  • 2 tbsp lemon juice
  • 1 tbsp Gochujang (Korean red chili paste)
  • 3/4 tsp kosher salt
  • 3 cups shredded rotisserie chicken (for convenience, or freshly cooked chicken breast/thighs)
  • 1 cup shredded red cabbage
  • 1 pint cherry tomatoes, halved
  • 1/2 English cucumber, thinly sliced
  • 8 ounces trimmed green beans, blanched and chopped
  • Butter lettuce leaves, for serving
  • Scallions, thinly sliced for garnish

Directions:

  1. To prepare the dressing, add the toasted pine nuts to a food processor. Pulse the pine nuts until a coarse, crumbly paste forms. You may need to stop and scrape down the sides of the processor bowl occasionally to ensure even processing.
  2. Next, add the 1/4 cup water, yellow mustard, fresh lemon juice, Gochujang, and kosher salt to the food processor with the pine nuts. Pulse until all ingredients are thoroughly combined and the mixture forms a smooth, flavorful dressing. Set aside.
  3. In a large mixing bowl, combine the shredded rotisserie chicken. Add approximately half of the prepared dressing mixture to the chicken and toss gently to ensure the chicken is evenly coated.
  4. Then, add the shredded red cabbage, halved cherry tomatoes, thinly sliced English cucumber, and blanched green beans to the bowl with the chicken. Pour in the remaining dressing and toss everything together thoroughly until all ingredients are well combined and coated with the vibrant dressing. Taste and adjust seasoning if necessary, adding more salt or Gochujang to your preference.
  5. To serve, take a crisp butter lettuce leaf and spoon a generous dollop of the Korean chicken salad mixture into the center. Garnish with thinly sliced scallions for an added burst of freshness and color.
  6. Repeat this process with the remaining lettuce leaves and chicken salad until all the mixture has been used. Serve immediately and enjoy the delightful blend of flavors and textures! This salad is perfect as a light lunch, appetizer, or a healthy snack.
