Mumbai Baked Salmon with Avocado Salsa

  • for the salmon:
  • 4 6oz salmon fillets
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp garlic powder
  • salt and pepper to taste
  • olive oil
  • for the avocado salsa:
  • 2 avocados, chopped
  • 1 1/2 cups halved grape tomatoes
  • 3 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 jalapeno, seeded, minced
  • 1/4 cup chopped cilantro
  • 1 tsp kosher salt
  • 1 tsp ground pepper
  • 3 tbsp olive oil

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly spray a baking sheet with non-stick cooking spray or line it with parchment paper for easy cleanup. Arrange the salmon fillets evenly on the prepared baking sheet.
  2. In a small bowl, combine the turmeric, paprika, coriander, cumin, garlic powder, salt, and black pepper. Mix well to create your aromatic Mumbai spice blend. Generously sprinkle this spice mixture over each salmon fillet, ensuring they are well-coated and seasoned to perfection. Drizzle a light amount of olive oil over the top of the fillets, which will help create a beautiful crust and keep the salmon moist. Bake the salmon for approximately 12 to 15 minutes, or until it is cooked through and flakes easily with a fork. Cooking times may vary depending on the thickness of your fillets.
