Barbecue Chicken, Pineapple, and Red Onion Pizza
Prep Time: 20 minutes
Cook Time: 15 minutes
Ingredients:
- 1 pound chicken tenders
- Salt and freshly ground black pepper, to taste
- 3 tablespoons unsalted butter
- 1 cup quality barbecue sauce (divided)
- 1 tablespoon honey
- 1 teaspoon molasses
- 1/3 cup packed light brown sugar
- 16 ounces fresh mozzarella cheese, thinly sliced
- 1 1/2 cups shredded Gouda cheese
- 1/2 red onion, very thinly sliced
- 1 cup small fresh pineapple chunks, well-drained (or canned, drained well)
- 1/4 cup fresh cilantro, chopped (for garnish)
- 1 package (approximately 13-16 oz) store-bought pizza dough, at room temperature
Directions:
- Preheat your oven to 425 degrees F (220 degrees C).
- Prepare a large baking sheet by lining it with a silicone baking mat (Silpat) or parchment paper. If using store-bought pizza dough, ensure it has come to room temperature for at least 20 minutes prior to handling; this will make it much easier to roll out and shape.
- In a large skillet, preheated over medium-high heat, melt the 3 tablespoons of butter. Season the chicken tenders generously on both sides with salt and freshly ground black pepper. Add the chicken to the hot skillet and cook for about 8-10 minutes, flipping once, or until the chicken is fully cooked through and no longer pink in the center.
- Remove the cooked chicken from the skillet and place it on a clean cutting board. Once slightly cooled, shred the chicken using two forks or finely chop it. Transfer the shredded chicken to a large mixing bowl.
- To the shredded chicken, add 3/4 cup of the barbecue sauce, the honey, molasses, and brown sugar. Stir thoroughly until the chicken is completely coated with the sweet and savory barbecue mixture.
- Carefully roll out the pizza dough on your prepared baking sheet into your desired shape (rectangle or circle), aiming for an even thickness.
- Spread the remaining 1/4 cup of barbecue sauce evenly over the rolled-out pizza dough, leaving a small border for the crust.
- Generously top the sauce with the thinly sliced fresh mozzarella and the shredded Gouda cheese.
- Evenly distribute the barbecue chicken mixture, the well-drained pineapple chunks, and the thinly sliced red onion over the cheese layer.
- Bake the pizza in the preheated oven for approximately 10-12 minutes, or until the crust is golden brown and the cheese is bubbly.
- Remove the pizza from the oven. If desired, sprinkle a little more fresh mozzarella or Gouda cheese over the top, along with about half of the chopped fresh cilantro. Return the pizza to the oven for an additional 2-3 minutes, just long enough for the cheese to melt beautifully.
