1 cup olive oil (divided)
3 medium tomatoes, deseeded, chopped
5 garlic cloves, minced
1 1/4 teaspoons crushed red pepper flakes
Salt and freshly ground black pepper to taste
1 large eggplant, chopped into 1-inch cubes
2 small zucchini, chopped into 1-inch pieces
1 large red onion, finely chopped
1 red bell pepper, chopped into 1-inch pieces
1 bay leaf
1/2 cup fresh basil, chopped

1 lb cooked turkey, ground or shredded

For the Herbed Dumplings:

1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 teaspoon herbs de Provence
1/2 cup plus 2 tablespoons milk (approximately)

Directions:

For the Ratatouille:

  1. Preheat a large, deep skillet or Dutch oven over medium-high heat. Add two tablespoons of olive oil to the pan.
  2. Begin browning the vegetables individually for optimal flavor. First, add the chopped tomatoes along with one minced garlic clove, 1/4 teaspoon crushed red pepper flakes, and a pinch of salt. Cook for about five minutes, stirring occasionally, until the tomatoes have softened and released their juices. Remove the softened tomatoes from the skillet and set them aside in a bowl.
  3. Add another tablespoon or two of olive oil to the skillet. Repeat the browning process individually for the eggplant, zucchini, red onions, and red bell pepper.   1. In a medium-sized mixing bowl, whisk together the 1 cup all-purpose flour, herbs de Provence, baking powder, and 1/2 teaspoon kosher salt until thoroughly combined.
  2. Gradually pour in 1/2 cup of milk, stirring gently with a spoon until a soft, thick batter forms. The consistency should resemble a pancake batter, thick enough to hold its shape but still spoonable. If the batter appears too thick, add the remaining 2 tablespoons of milk, one tablespoon at a time, until the desired consistency is achieved. Do not overmix.

Assembling and Cooking the Skillet:

  1. With the ratatouille mixture gently simmering, take a tablespoon or a small spoon and carefully scoop approximately 2 to 3 tablespoons of the dumpling batter.
